Cilantro Rice Recipe

  • 1 head cauliflower
  • 2 cloves garlic, minced or pressed
  • 1 tablespoon coconut oil
  • 1-2 limes, juiced (about 1/4 cup)
  • 1/4 cup chopped cilantro
  • Sea salt, to taste


Wash, carefully dry, and chop the cauliflower into pieces. This is essential for the proper consistency of the ‘rice’. Place the cauliflower in a Vitamix and slowly pulse. The texture should look like short grain rice. You may have to do this in batches to avoid it becoming mushy.

In a saucepan, saute the garlic in the oil over medium-high heat for 1 minute. Add the ‘rice’ and cooked for 3-5 minutes or until done. Pour the lime juice over the rice and gently stir in the cilantro. Season with sea salt. Serve warm.
