Holiday Stress: How I Keep My Sh*! Together When I’m Stressed Out

Now that December's rolled around, I'm gift shopping, planning dinners with family and friends, and rejoicing in our baby, Kaden. The holidays really ramp up stress with all the extra work plus managing Chef V. Reducing stress can be challenging anytime, and during the holidays it is harder – and more important – than ever.

How do I keep my cool during the “season of cheer”? I treat myself – and you should treat yourself too, because it keeps you healthier, and that is super important right now.

Here’s how I keep my sh*! together….

To keep my stress levels down in this busy time, I’m focusing on the good things in my life: a beautiful baby, a thriving business, a handsome and devoted husband, a fit physique, cooking skills, the ability to turn any cocktail into a healthy mocktail, pickle ball(!) and, I have another love on the side–Coconut (my canine kid).

And we live in one of the most beautiful places on the planet: sunny, temperate San Diego, where I can go to the beach. Some people go their whole lifetime without ever seeing the ocean. But I’ve lost track of how many times I’ve taken an early-morning beach walk, watching the dolphins surf the waves (while sipping Green Drink, natch).

No matter what my stress level, I know I need three things to keep myself sane and centered. Meditation, yoga, and Green Drink.

No matter what’s going in my life, three things are a constant every morning: meditation, yoga and Green Drink. Even now, when we are extra busy, you can follow my stress management steps.

As soon as I get up and take care of Kaden, I sit cross-legged and do some pranayama breathing. Pranayam is the foundation of any yoga practice. Even if I know that I’m going to have to face lots of frustration later in the day, these breathing exercises are so important. They’re like the equivalent of recharging your cell phone, only for your mind.

And no matter how exhausting the previous day was, I always find that practicing pranayama breathing is like a natural cup of coffee. Within a couple minutes, I notice a dramatic boost in my energy level, even if I didn’t sleep well. I feel the stress melting away. Even if my stress level will rise later in the day, this is the ultimate stress-management technique to do first thing in the morning.

There are a ton of YouTube videos you can follow along to. (Maybe I’ll create my own video after the new store is up and running on autopilot.)

Pranayama breathing warms your body and mind up for the asanas, (physical postures) of my yoga practice.

Despite 10-12 hour long days keeping the Chef V kitchen and delivery services running and lots of time with Kaden, I make sure I do a minimum of 10-15 minutes of yoga. It’s so easy to let stress get the best of you and say, “I’ve got no time today for yoga, I’ve got so much work to do….”

But I’m telling you the more stressful your day, the more you need to start your day off with yoga to manage your stress.

To those who know me, I might seem centered but without meditation and yoga, I might be a mess. And with the additional stress of a new baby, I’m keeping the time I spend on both.

Keeping Your (Third) Eye on the Prize

Speaking of meditation, I finish my yoga practice with 5-10 minutes of silent meditation. If you don’t think you can sit in silence for even a minute, no worries. There are free guided meditation apps you can follow along to.

While I meditate I try to think of nothing other than my breathing. Then, after that, I take a few minutes and visualize what I want to achieve for the day. I think it’s really important to keep your eye on the prize and not stress out on annoying impediments get in the way of achieving your goals. I’m trying to focus on the good things in my life and in the ways I can make the lives of my employees and customers better.

Immediately after I’m done with my yoga and meditation practice, I nourish my body and keep my immune system healthy with 16 oz of Green Drink. I need the extra boost of fresh Green Drink energy and health more than ever right now.

Treating Yourself When You’re Stressed Out

You might feel blissed-out eating the ice cream for maybe 10 minutes or so. But an hour later, you’re going to feel like you’re dragging. Macho Nachos

My Macho Nachos recipe has everything a macho guy (or gal) could want in flavor and crunch, without the harmful fats and calories.

Whether for Cinco de Mayo or the Super Bowl, this easy to make recipe is a hit with everyone.  – Veronica

Chef V Macho Nacho with Taco seasoning

Serving Size: 2-4 People

Ingredients

CHEF V’S TACO SEASONING
2 teaspoons hot chili powder
1 teaspoon of each: paprika and onion powder
½ teaspoon of each: sea salt, garlic powder,
ground cumin, and oregano
¼ teaspoon black pepper
⅛ teaspoon of each: cayenne pepper and
red pepper flakes

TORTILLA CHIPS
4 gluten-free, corn-free tortillas (I like Rudi’s®)
1 tablespoon coconut oil
1 teaspoon Chef V’s Taco Seasoning
½ cup shredded Daiya® cheddar shreds

NACHO ‘MEAT’
1 tablespoon coconut oil
½ cup diced yellow onion
2 cups diced mushrooms or 1 pound ground turkey
1 tablespoon Chef V’s Taco Seasoning
¼ cup water or Chef V’s Homemade Almond Milk

TOPPINGS
1 cup cooked or canned black or pinto beans, warmed
1 whole avocado, diced
½ cup of each: diced and peeled mango, chopped
cilantro, and chopped green onion

Directions

Chef V’s Tip: For more protein, use 1 pound ground turkey instead of mushrooms. This is great for entertaining!

Combine all taco seasoning ingredients in a small bowl. Set aside.

Preheat oven to 350°F. Cut the tortillas into chip shapes.

In a large bowl, combine the coconut oil and 1 teaspoon of taco seasoning, if desired. Add the chips and gently coat.

Line 1 or 2 baking sheets with foil or parchment paper or use an oven-safe serveware piece. Place the chips in a single layer.

Bake for 8-10 minutes, but do not completely cook the chips. Remove the chips from the oven and sprinkle with Daiya® shreds. Bake for 3-4 more minutes, until the shreds are melted.

To make the nacho ‘meat,’ melt the coconut oil over medium-high heat in a saucepan. Add the onions and sauté until translucent, about 2-3 minutes. Stir in the mushrooms (or ground turkey) and cook for 3 minutes. Add the taco seasoning and water or almond milk. Continue to cook through, stirring occasionally, for 2-3 more minutes. Keep warm on the stovetop.

To serve, transfer the chips onto a serving plate or leave on the oven-safe serveware piece. Top with warm black beans or pinto beans, nacho ‘meat’ (vegan or turkey), avocado, mango, cilantro, and green onion.

Love Salad

Pomegranate seeds are so yummy. They are sweet and tart and add a delicious crunch to any dish. They have lots of fiber and two essential Vitamins, C and K. Sprinkle them on your favorite salads and soups or toss them into your next smoothie.

Ingredients

1 large organic red chard leaf, washed & chopped
1 cup organic red leaf lettuce or red spinach, washed and chopped
1 tbsp. cold pressed olive oil
1 tbsp. organic balsamic vinegar
1 small raw organic beet, washed, skinned & grated
½ cup organic raspberries
2 small radishes, shaved
¼ cup pomegranate seeds
¼ cup chopped raw walnuts

Directions

Combine olive oil and vinegar with chard and red leaf lettuce. Divide lettuce on two separate plates.

Distribute half the beets, raspberries, radish, pomegranate seeds and chopped walnuts to each salad.

Raw Pesto Lasagna w/ Macadamia Ricotta

Raw pesto lasagna made with zucchini, meaty Portabella mushrooms, and a rich tasting macadamia “ricotta” make this raw lasagna a summer treat. Pine nuts, garlic and spicy arugula in the pesto add even more flavor and zest.  – Veronica

Serving Size: 2 People

Ingredients

  • 4 large zucchini, sliced thin, length-wise (the sub for noodles)
  • 2 large portabella mushrooms, sliced thin, the length-wise (sub for noodles)

‘Ricotta’ Cheese Ingredients:

  • 1 cup macadamia nuts- soaked for an hour
  • 1 lemon juiced
  • 1 tbsp. olive oil
  • 1 tsp. organic sea salt
  • 1 tbsp. fresh chopped rosemary

Pesto Ingredients:

  • 1 cup fresh organic basil
  • 1⁄2 cup raw pine nuts
  • 1 clove garlic
  • 2 tbsp. cold pressed olive oil
  • 2 tbsp. water
  • 1⁄2 cup organic arugula
  • 1 tsp. organic sea salt

Directions

Prepare the ricotta cheese by mixing all ingredients into Vitamix or food processor and process until smooth. Set aside in a bowl, scrapping the sides to get all the ‘cheese’.

Rinse Vitamix and blend all the pesto ingredients together, slowly adding the oil while blending. Set aside in a bowl, scrapping the sides of Vitamix to get all pesto. I

n a 3 x 8 baking dish, smear a small amount of pesto on the bottom. Layer 2-3 pieces of zucchini. Layer 1⁄2 the amount of ‘ricotta’ on top of the zucchini.

Layer 2-3 Portabella mushrooms on top of the ricotta. Layer 1⁄2 the amount of Pesto on top of the mushrooms. Repeat once more and end with pesto layer on top. Garnish with leftover pine nuts and shredded basil. Bon Appetit!

Miso Glazed Salmon with Wasabi Sweet Potato Purée and Asparagus

I think that it’s good for most people to have a little animal protein every now and then. Especially cold-water oily fish rich in omega-3s like salmon.

This misoglazed salmon is super easy. For the salmon, broil it for 5 minutes with this marinade. Let the marinade sit for 30 minutes on the fish before cooking.

Ingredients

  • 2 six ounce wild salmon fillets
  • 3 tbsp. white miso paste
  • 2 tbsp coconut sugar
  • 1 tbsp rice vinegar
  • 1 tbsp fresh ginger grated
  • 2 tbsp coconut aminos           
  • ½ tsp toasted sesame oil
  • 8 spears asparagus
  • 1  white sweet potato
  • 2 tbsp hot water
  • 1 tsp wasabi paste
  • salt & pepper to taste

Directions

Mix all marinade ingredients together in a glass measuring cup. Arrange salmon and cover in marinade for 30 minutes.

Salmon

Place salmon on a different sheet to cook than the one it was marinated on. Broil the salmon for 5 minutes and check firmness. I like my salmon under cooked and let it rest. You can always add the salmon back in but you can’t “uncook” it. 

Asparagus

Then I rub the asparagus in remaining marinade and cook for 10 minutes at 350F in the oven on a baking sheet. 

Wasabi Sweet Potato

The wasabi sweet potato purée is simple.  Just skin and boil one white sweet potato (you can tell by scratching the skin if it’s white).

Drain water but reserve ½ cup. Blend potato with 2 tbsp hot water and 1 tsp wasabi paste. Add salt and pepper to taste. 

Creamy Broccoli Soup

My Creamy Broccoli Soup is made with coconut milk and coconut oil.

In case you didn’t know, coconut milk is the liquid that comes from the grated meat of a brown coconut, whereas coconut water is the clear liquid inside the young green coconut.

When using canned coconut milk, shake the can first to even out the creamy thickness of the milk inside. Once opened, cans of coconut milk must be refrigerated and are usually only good for a few days. – Veronica

Cook Time: 20 Min

Serving Size: 2 People

Ingredients

  • 1 large yellow onion, diced
  • 2 shallots, minced or pressed
  • 2 cloves garlic, minced or pressed
  • 2 tablespoons coconut oil
  • 4 cups vegetable broth
  • 6 cups chopped broccoli florets
  • 1 tablespoon fresh thyme leaves
  • 1/2 cup coconut milk
  • 1/2 cup raw cashews, soaked and drained
  • 1/2 cup raw pumpkin seeds

Directions

In a large stockpot over medium high heat, sauté the onions, shallots and garlic in the coconut oil and cook for about 3 to 4 minutes, or until the onions are translucent.

Add the broth and broccoli and boil for 10 minutes or until the broccoli is just tender.

Transfer to a Vitamix in batches. If necessary, and process until smooth. Add thyme, coconut milk, and cashews and blend again until smooth. Top with pumpkin seeds and serve.

Ginger Glazed Salmon w/ Baby Bok Choy

I think that it’s good for most people to have a little animal protein every now and then. Serving Size: 2 People

Ingredients

  • 1 tablespoon cold-pressed olive oil
  • 2 tablespoons coconut aminos
  • 1 lemon, juiced
  • 1 tbsp. coconut nectar
  • 2 cloves garlic, minced or pressed
  • 2 teaspoons fresh ginger, minced or pressed
  • 2 (6-ounce) wild salmon fillets
  • 2 baby bok choy
  • Sea salt, optional to taste

Directions

Mix the olive oil, coconut aminos, lemon juice, coconut nectar, garlic, and ginger in bowl.Divide the marinade between 2 shallow dishes or zip-top bags and place the salmon in one and the bok choy in the other. Marinate both for 30 minutes.

Heat a grill or grill pan and grill the salmon for 5 minutes per side, or until cooked to desired level of finish (I prefer a tiny bit of pink on the inside so the salmon doesn’t get dried out). Grill the baby bok choy until lightly charred, 1-2 minutes per side, or until tender. Brush with extra marinade while grilling.
