Organic Eggs Aren’t Necessarily Eggceptional For Health

If it’s organic, you’re not supposed to panic, right? 

Well, depending on what brand you purchase, organic eggs might not be all that they’re cracked up to be. 

Before I explain why, let me just weigh in on whether or not eggs are healthy in the first place. Out of all the common foods you can buy in a supermarket, eggs are definitely one of the most controversial. Eggs are supposed to be the perfect food, offering protein, essential fatty acids and vitamins and minerals. 

On the other hand, eggs are super high in cholesterol. Just one egg contains about 70% of the suggested daily limit of dietary cholesterol. But dietary cholesterol doesn’t affect your blood cholesterol levels that much, maybe like 10%. However, some people have a genetic predisposition to developing heart disease, which is caused by a narrowing and hardening of the blood vessels, which is caused by cholesterol buildup in the arteries. 

Even a 10% influence on blood cholesterol can have a huge impact if you’re predisposed to cardiovascular disease. And the only way to know for sure if that’s you is to get a genetic test. The safe thing to do until you get a genetic test is to limit your consumption of eggs. (You can order a DNA cholesterol test online). 

Personally, I’m not a big fan of eggs. If I’m at brunch, maybe I’ll share an omelette. But it’s rare for me to make eggs at home. For one thing, I barely ever eat breakfast. Instead, I just have a Green Drink and then later in the morning I might have a plant-based protein smoothie (with brown rice protein or pea protein powder). 

But for those of you who love eggs and think organic eggs are super healthy, I have some bad news to share with you in a little bit…

Why Organic Eggs Are Healthier

For sure, it’s important to buy organic for certain types of foods. For instance, I always buy organic produce–and use organic produce for Chef V Green Drinks. Non-organic produce contains the same amount of nutrients as organic but also is heavily sprayed with pesticides like glyphosate, the main active ingredient in Roundup weed killer. 

But for foods like eggs with a hard external barrier (the shell), does buying organic really matter? 

The answer is yes, for two main reasons. For starters, unlike produce, organic eggs are more nutritious than their conventionally grown counterparts. A study from Penn State University found that organic chicken eggs contain three times the amount of omega-3 fatty acids, 40% more vitamin A and twice the amount of vitamin E. 

The other reason to eat organic eggs instead of non-organic is that they are free from antibiotics. 

And here’s one more factor in favor of organic over conventional eggs: they contain less arsenic, which is a natural Earth element but highly toxic. Think about these facts the next time you eat eggs at a greasy-spoon diner.

I don’t want you to freak out about eating the occasional egg or two. But reading this should give you food for thought about eating conventional eggs.

Not All Organic Eggs Are Created Equal

Now here’s the thing I was shocked to read. According to this Egg Scorecard by Cornucopia, some of the most well-known brands of organic eggs are rated barely better than a conventional egg. 

So if you’re buying organic eggs from the following brands, you might be fooled into thinking that the chickens have been raised in very humane environments:

  • Costco (Kirkland brand)
  • 365 Organic (Whole Foods)
  • Walmart
  • Horizon 
  • Simply Nature (Aldi)
  • Harris Teeter Naturals (Kroger)
  • Sun Valley (Smart & Final)
  • Fairway Market
  • Trader Joe’s
  • Sprout’s
  • Wegman’s
  • Publix
  • Chino Valley Ranchers

These brands were rated by Cornucopia as one egg on a five egg scale. That means the chickens didn’t have meaningful access to the outdoors and the opening often leads to a concrete porch, not a bucolic pasture where the chickens roam free all day. 

Plus, the gateway to the porch is intentionally small so that the chickens aren’t encouraged to go outside in the first place. Essentially, these brands are not much better than industrial, non-organic eggs. I can’t say I’m that totally surprised to have read this info. But I was disappointed that one of my favorite supermarkets, Trader Joe’s, doesn’t have better quality eggs.

Splurge For High Quality Organic Eggs

My take on eggs is to treat them like ice cream: to be enjoyed as an occasional treat. And when you enjoy a rare treat, splurge for it. Buy the best quality possible. It might seem ridiculous to buy a carton of eggs for $8. But if I ever buy eggs, I’d purchase them from a farmer’s market, even if a dozen costs $5 more than a supermarket brand. I’d want to know that the eggs I’m eating come from chickens that live in a mansion of a coop, with easy access to the outdoors where they can forage for worms, grubs and whatever else it is that chickens peck and consume. 

Yes, eggs are a great source of protein. But the truth is you don’t really need as much protein as you think. Besides, there are plenty of plant-based protein-rich sources. But if you’re craving eggs, you may as well treat your body to the highest quality possible. Just like with any other kind of food, shop local for eggs—support your local farmers.

What’s The Best Plant-Based Burger? A Comparison Of The Most Popular Brands

Plant-based burgers are having a moment. It seems that every time I hit the supermarket, there’s a new veggie burger brand. Even food-industry giants like Tyson Foods, Cargill, Nestle and Perdue Farms are having veggie burger FOMO. They’re hopping on the plant-based burger wagon, launching meat-substitute products.

But is this a good thing?

Before I answer that question, I reviewed the ingredients list i seven of the most popular brands of plant-based burgers. Here’s what I found:

Impossible Burger

Along with Beyond Burger (listed below), Impossible Brands’ Impossible Burger has fueled the plant-based burger revolution. I wrote extensively about the Impossible Burger in a previous post. I’ll sum up what I wrote: Probably the best-tasting plant-based burger on the market. There’s a good reason why Burger King chose it for its wildly-successful Impossible Whopper. It looks just like a meat burger, drips blood-red juice just like a real burger and tastes pretty much like a beef patty. What’s not to love?

The bad news is that it contains two highly-processed forms of soy, one of which is a new genetically-modified version called Soy Leghemoglobin (“Heme” for short).

I’ve had a couple friends tell me that after eating an Impossible Burger, their next trip to the bathroom did not go well. Plus bad cramping.

Could it be that because Heme is basically new to human stomachs, our bodies don’t know how to react to it? Could it be that in some people, Impossible Burgers can trigger autoimmune reactions?

Time will only tell. I’m all for eating plant-based REAL food, but a soy that’s been grown in a lab? I don’t care how much it tastes just like the real thing, I’d rather eat a 100% grass-fed burger once a year that’s sourced from an organic, small family farm.

And one more concerning thing about the Impossible Burger: it’s made with coconut oil. The problem with coconut oil is that saturated fat comprises up to 90% of the total fat. For some people with a family of heart disease, coconut oil could be a ticking time bomb. (If you eat a lot of coconut oil, get your cholesterol levels checked once a year.)

Beyond Burger

Like Impossible Brands, Beyond Meat, maker of Beyond Burger, has scored some fat paychecks in the form of venture capital. Bill Gates invests in Beyond Meat (he also invested $50 million in Impossible Brands) and that huge seed funding (no pun intended) is the reason why Beyond Burgers can be found in virtually every single supermarket in the country.

Beyond Burger claims to be GMO-free. So that’s a good start. It also tastes similar to the Impossible Burger. So if I had to choose between these two fake meat giants, I’d go with Beyond, based simply on the fact the company does not use soy heme.

For proteins, instead of soy, Beyond uses pea protein isolate, beans and brown rice. Pretty good so far. According to the American Institute for Cancer Research, pea protein isolate does not contain whole pea’s carbohydrate compounds that can support anti-inflammatory gut bacteria. But let’s not split hairs (or peas), because when you’re craving a burger, you know you’re not exactly eating a salad between two buns.

A couple things to watch out for: Beyond Meat also uses coconut oil as well as canola oil. I’m not crazy about canola oil. But again, when you want to sink your teeth into some fake meat, every once in a while, it won’t kill you. At least the canola oil is expeller-pressed, which means no harsh chemicals like hexane are used to extract the oil from the rapeseed plant. (Yes, canola oil comes from the rapeseed plant but don’t let that name spoil your appetite.)

I also like the fact Beyond uses beet extract to make its burger appear blood-red, unlike the lab-produced soy heme of the Impossible Burger.

Dr. Prager’s California Veggie Burger

The godfather of the plant-based burger world, Dr. Prager’s California Veggie Burger hit the shelves in 1996. Fun fact: The brand was launched by a heart surgeon, Peter Prager, who died in 2012 at the age of 66. But don’t let his early death cloud your judgement of the California Burger. His obituary hinted his death could have been caused by prostate cancer.

Anyhoo, how does this relatively ancient brand of fake burger compare to Impossible and Beyond? In terms of taste, there’s no comparison. Dr. Prager’s tastes nothing like a real burger. But nutritionally speaking, I think it’s one of the most superior ones.

The ingredients list is not perfect. There are two ingredients I’m not thrilled about. Can you guess which ones they are in the list?

Carrots, Onions, String Beans, Oat Bran, Soybeans, Zucchini, Expeller Pressed Canola Oil, Peas, Broccoli, Corn, Soy Flour, Spinach, Red Peppers, Arrowroot Powder, Corn Starch, Garlic, Corn Meal, Sea Salt, Parsley, Black Pepper.

I already mentioned I’m not crazy about canola oil. But that’s how veggie burgers can stay relatively inexpensive. If they used avocado oil, each patty would cost a buck or two more probably. The two other ingredients that as a certified nutritional therapist bother me somewhat are soy flour and cornstarch. Soy can drive estrogen levels too high in younger women. It’s also one of the most common triggers of food allergies. As for cornstarch, while it’s a great ingredient for body powder, it’s basically just high-glycemic sugar. But all in all this is one of the best, ingredients-wise.

But the texture of Dr. Prager’s and almost every fake burger is crumbly. You definitely don’t get that true burger experience. So what I do is rather than eat it as a true burger, I chop it into pieces and top it on a whole grain or salad for a filling meal.

Morning Star Farm Burger

MorningStar Farms Garden Veggie Burger

If Dr. Praeger’s is the godfather of fake meat, MorningStar is the great grandfather. It hit the shelves in 1975. Even I wasn’t born then, haha!

Let’s jump right into the ingredients:

Water, carrots, onions, soy flour, egg whites, mushrooms, whole grain oats, wheat gluten, water chestnuts, vegetable oil (corn, canola, and/or sunflower oil), green bell peppers, calcium caseinate (from milk), cooked brown rice (water, brown rice), red bell peppers.

Good stuff, except for the same soy problem? There’s more bad news I’m afraid. Vegetable oils are terrible for your health. They are a major contributing factor to inflammatory-related diseases. Also, oats are a major source of glyphosate residue. Glyphosate is a herbicide used in the weed killer, Roundup. It’s been blamed for causing cancer in more than 125,000 lawsuits.

Considering the crumbly end-product and the fact that it’s nowhere-near-close to tasting like the real thing, I’ll pass.

Trader Joe’s Quinoa Cowboy Burger

I love the vibe at Trader Joe’s. But do I love sinking my teeth into a quinoa burger? Once in a blue moon, I do. I like the fact that it contains 13% of the daily recommended value of vitamin A. And it’s also a great source of fiber (6 grams; 24% DV).

Here’s the ingredients list:

Cooked tri color quinoa (tri blend quinoa, water), red peppers, cooked black beans (black beans, water), bread crumbs (wheat flour, sugar, yeast, salt), expeller pressed canola oil, roasted corn, onions, potato flakes, arrowroot, tomatoes, olive oil, jalapeno peppers, tomato paste, egg white powder, roasted garlic, white vinegar, salt, cilantro, chili powder (chili pepper, salt, garlic, cumin, spices), onion powder, coriander, black pepper, garlic powder, chipotle powder, lime juice powder.

Pretty much all good stuff. Just cook it much longer than the instructions say. And if it falls apart, who cares, it still tastes good in my opinion.

I admit to as of yet not having tried this Wisconsin-based brand, but I do love the ingredients of their garden herb alternative meat patty:

Organic cooked brown rice, organic ground raw sunflower seeds, organic carrots, organic chives, sea salt.

Simple, organic, real-food ingredients. It’s on my list to try…

Amy’s All-American Veggie Burger

I used to love Amy's veggie burritos back in the day. But I’m not all too crazy about the veggie burgers, mostly because of the soy issue. Here’s the list of ingredients:

Textured soy protein, organic onions, organic soy fiber, organic mushrooms, organic bulgur wheat, wheat gluten, filtered water, organic celery, organic carrots, organic walnuts, organic oats, organic bell peppers, expeller pressed high oleic safflower and/or sunflower oil, organic sweet rice flour, sea salt, organic potatoes, spices, organic tomato purée, organic cane sugar, organic garlic, organic apple cider vinegar, organic blackstrap molasses, stoneground mustard (distilled vinegar, water, ground mustard seeds, salt, spices), hickory smoke flavor, black pepper, clove oil.

Again, mostly good stuff, but all it takes is a few bad apples to spoil the bunch. Besides the soy protein and soy fiber, I don’t like the wheat gluten or the vegetable oils.

But again, if you like the flavor of it and it’s a once in a while treat, go for it.

Best Plant-Based Burgers: Conclusion

I’m not going to tell you which plant-based burger I think is best. Now you’re armed with the nutrition facts. Plus, taste is such a subjective thing. What I can tell you is that plant-based burgers are most often not the healthy alternative to meat you might think it is. Are veggie burgers in general better for you than fast food burgers? Definitely. But is eating lab-produced GMO-soy better for your health than eating a grass-fed burger that was sourced on a sustainable, organic farm? That’s up for debate.

Rico Caveglia: Hello, I am Rico Caveglia, and this is your Ageless Body Self-Care Guide, operations manual for your body and for your mind.

The title of today’s interview is about cleansing. This is such an important topic these days. I’m sure you probably know that we live in quite a toxic environment these days. We’re getting toxins from the air, the water, the food, beauty products, building material products. We’re getting bombarded with toxins all the time, so it’s so important to learn about what cleansing is and what it can do for you and how to do it.

We’re very fortunate today to have one of the top experts. Her name is Veronica Wheat, and she is known as Chef V. She is a private chef, a nutritional therapist, and owner of Chef V. It’s a green drink and cleansing program company that actually home delivers. She’s offering quite a great service. Chef V, Veronica Wheat, thanks so much for being here.

Veronica Wheat (Chef V): Thank you for having me, Rico.

Rico: Thanks for coming to share your knowledge and wisdom with us. I really appreciate that. Let’s get right into it. Always the first question is, how do you define what a cleanse is? What is the definition of cleansing the body?

Chef V: Basically, our bodies are designed to naturally cleanse and detoxify themselves. Every night when you go to sleep, your cells start going to work detoxing all the impurities, breaking down foods, getting the nutrients from the food, and really getting rid of the rest of everything. We come in contact with so many toxins.

Our bodies do naturally cleanse; however, in today’s world, like you’re saying, we are loaded with toxins. All the preservatives in the food, all the additives, the colors, the dyes. In beauty products alone, there’s 2,000 chemicals that some companies are banning, and they’re not regulated here in the United States. Air pollution has lots of toxins. While our bodies they do naturally detoxify, there’s a lot of things out there that our body – it’s bombarded. It’s too much. So we really do need to give it a break.

If you’re really a very healthy person and you avoid perfumes, dyes, bad products, lotions, even toothpaste, shampoos – there’s so many chemicals in all these things we’re using. If you eat really clean and avoid toxins in all these areas, you’re a lot better off. But 95% of the population is unaware of all these things. They’re thinking that things are safe from them and putting them in their body or on their body or breathing them in or ingesting them, and it’s just too much. Your body starts breaking down. Autoimmune diseases, diabetes, all these different ailments that people are starting to see.

It’s important to add cleansing things into your diet. Lemon water detoxifies the liver first thing in the morning, if you’re doing that. You’ll notice in the morning when you wake up, your pee might be a little darker. You’ll have bowel movements. That’s really your body cleansing and detoxifying. Your body naturally does cleanse, but there’s also ways to add more cleansing and detoxifying systems into your body.

Rico: I want to add to exactly what you said. Unless you live on top of a mountain somewhere in purified air and have your own organic garden, no matter what we do, even if we eat organic, we’re still getting lots of toxins all the time. So it’s so important.

Talk to us a little bit about – it’s all about our immune system, especially these days with the virus going around and all that. I think an important thing for people to realize is that these toxins are cumulative. You might say “Just because I eat this apple and maybe it’s got preservatives on it, so what?” But the thing is all these things are cumulative, all the different ways we get it. How does that work? When we get too much overload, our immune system breaks down? Is that what happens?

Chef V: Yeah. Everyone’s really different in how they hold on to toxins, especially if you exercise a lot. That really helps detoxify the body. So if you’re exercising and eating well, you are naturally cleansing your body in certain ways.

But a lot of people are not exercising and they’re eating really horribly and they’re using all these lotions and perfumes, dyes, air fresheners. There’s so many chemicals. People think “Oh yeah, I’m going to spray Febreze around my house to make it smell good!” You’re inhaling chemical toxins into your body. There’s just so much out there. I think a lot of people think that things are regulated and things are safe for them just because they’re on a store shelf when that’s completely far from the truth.

We’re not infinite beings. Your body has limits, and when you’re putting so many toxins – cigarette smoke, lots of alcohol. It can only handle so much, and then you might get lung cancer or liver cancer or something like that. By helping to cleanse and take breaks from certain things – not saying you can never have a drink in your life. It’s just if you’re going to drink, make sure the next morning you’re having lemon water, cleansing, something healthy, a smoothie, a nice salad. If you want to eat pizza for dinner, then make sure you’re having something healthy for lunch that’s cleansing and detoxifying.

It’s all about balance. It’s really hard to avoid everything, and it’s not going to be fun if you’re not enjoying your life. But you do have to balance everything out for the wellbeing of your immune system. Otherwise your body will start shutting down.

Rico: Very well said. What are some of the main benefits you’ve seen from doing cleanses?

Chef V: I have developed different sorts of cleanses. I have a whole 3, 5, 7 day cleanse where you’re not having any solid foods. You’re just having green drinks, protein shakes, and soups. I can go more into that later. But also, what I really practice and preach is having a green drink every day first thing in the morning for breakfast. That way it’s the first thing you’re putting in your body. It’s the first thing processing through your liver, through your colon, and helping you cleanse and detox.

Sorry, what was the question again? I got off-track.

Rico: No, that’s a really good point of doing that first thing in the morning so you cleanse your liver so your liver is ready for whatever else it might have to deal with during the day.

Chef V: Oh, what have I seen from the cleansing.

Rico: Yeah, some of the benefits.

Chef V: I’ve had people that have done a 3-day cleanse rid themselves from autoimmune medication in just 3 days. Someone who was on autoimmune medication for 5-10 years. I had a guy that had gout on his leg – huge gout on his leg for 10 years. He did a 3-day cleanse; it completely melted away.

And it’s miraculous because it’s like, wow, if you’re just giving your body this little break – your body is amazing. It does miraculous things. The body can live on Top Ramen, cigarettes, and Coca-Cola. It can survive. It’s not going to be thriving, but that’s how miraculous the body is.

So when people just give it this little reset, this little break – and I’m not saying don’t eat. Don’t do lemon water and cayenne for 3 days. If you give your body nutrients and just take a break from all of the crap, the toxins, the alcohol, the gluten, the dairy, the processed meats, all of these things, your body really can function at its best. So that’s the things I’ve seen just from people doing a 3-day cleanse.

But I’ve had people that do the green drink every day – not just a full cleanse. They have food, they live their normal life, but just by having the green drink every day, I’ve seen people rid themselves of adult acne, rosacea, eczema. I’ve had one person lose 245 pounds, my biggest testimonial. He’s lost 245 pounds in 14 months, and his whole life has been changed.

I had another lady who did the green drink for a year. She had Type 2 diabetes, she had Graves’ disease, and she rid it completely just by implementing a green drink daily, which is just basically cleansing and detoxifying your body and giving your body this influx of nutrients. The most important is empty stomach. That way your body can absorb everything and your cells can get the most benefit from it.

Rico: It works. Talk a little bit about some of the plant-based foods or different plants and herbs and things that are cleansing to the body.

Chef V: In my drink, I use seven certified organic greens. I’ve chosen these specific greens because each one has a different function. These are not the only healthy foods that you can use. There’s tons more, and I can go a little bit into that.

But specifically for my drink, I use green and black kale because they are the highest phytonutrient greens on earth. The phytonutrients help fight free radicals in the body, which combats cancer. We also have green chard, which helps control your cholesterol. The collard greens help regulate your blood sugar. Dandelion greens specifically cleanse the liver. Parsley has folic acid and the green leaf lettuce is great for your hair, skin, nails, even your teeth. And then I have a little healthy dose of the apple, which also is healthy to have a little apple in your diet.

Rico: I’m actually a testimony for you as well because as you know, you’re a friend of mine, and you’ve actually contributed some of your green drinks to some of the workshops and things I’ve put on here in San Diego. I’ve had your green drinks quite often, and I have to say they’re the best tasting.

Whenever I try to make my own green drink and I put it in a blender and put all the stuff in, it always comes out like – oh man, I can hardly get it down. But you got the formula down. It actually tastes good and it’s smooth and easy to drink.

Chef V: Thank you. There’s also tons of other foods that are really healthy, cleansing, detoxifying. Anything green is going to be great in your diet. Ginger is great, garlic, onions. Berries are great. They have lots of antioxidants. There’s tons of other foods that are out there.

During COVID, I’ve done an immune boosting workshop that I’ve gone live with and talked about different foods and how to get more of them into your diet and why you should get them in your diet and easy ways to include them. There’s tons of foods that are detoxifying. You can even just google “cleansing foods, detoxifying foods,” and try and get more of those into your diet. Not saying that’s the only thing that you can eat or should eat, but you just eat more of them.

Rico: What would your recommend for someone who’s never done a cleanse at all and says “Maybe I should try something”? What would you recommend? How would they get started?

Chef V: Typically when people come into my store or call or reach out to me through the website or whatever and they want to do a cleanse, they say, “I want to do a 7-day cleanse because I want to get the most benefits.” I say, “Why don’t you start with a 3-day cleanse?” I put you on a 2-day pre-cleanse of elimination diet. No caffeine, alcohol, no red meat, no gluten, no dairy. Not saying you can never have that; again, just giving your body a little break from that. 

Most people lose 5 pounds on the pre-cleanse alone, and they just feel great. Their stomach is flatter, they have more energy, more vitality. Then I have them do a 3-day cleanse. I say anyone can do anything for 3 days. It’s pretty simple. By Day 2 you’re more than halfway through. I do give you everything that you need for the cleanse. You get four 16-ounce green drinks a day, two protein shakes a day, and then a yummy detox soup at night. By the time you get to that soup, it tastes like a steak because you’re so ready for it. [laughs]

I always tell people, it’s your cleanse. Listen to your body. If you need to add something into the day, like if you’re like, “Oh my gosh, I’m not going to make it,” most of the time it’s in your head. We’re so conditioned to have breakfast by this time and lunch by this time and dinner by this time because of society. So I tell people, be easy on yourself. If you need some raw nuts or some fresh vegetables or even just a clean piece of protein at the end of the day, make it your own.

But the purpose of cleansing basically is you don’t want to have as many solid foods because your body is usually always busy breaking down foods and digesting foods and assimilating where the proteins go, the carbohydrates, all these things, and then getting rid of the waste. That takes a lot of work and energy for your body. So at night, your body gets this break, and that’s when the most miraculous things happen in your body – at night, when you’re sleeping. If you’re young, you’re growing in your sleep. Your body is detoxing and doing all these things.

So basically when you’re doing my 3-day cleanse, you’re just extending that process. Everything that we serve is blended, not juiced. You’re getting all of the fiber, but it is blended so that your body doesn’t have to break it down and work so hard to digest it. And when your body is not working so hard to digest things, it can go and use all that energy to do other amazing, miraculous things, like rid that guy of gout that he had for 10 years, or help the immunity build itself back up.

That’s what the purpose of cleansing is, so I tell people if you can, try not to eat anything other than what we’ve provided you. But again, don’t make it miserable. Don’t feel like a failure and then give up because “I had to have a piece of chicken or some nuts” or something. Just keep going. You’re still doing way better than you would if you hadn’t done anything at all.

Rico: I’ve found too that sometimes when you think you’re hungry, you really maybe are thirsty. Just drink some water sometimes or go for a walk or something. Brush your teeth. Then you don’t feel like eating anything. It’s all little things that you can do. But yeah, again, I like what you said: you don’t have to be so strict and think that you lost it all. Anything you do is better than nothing.

Don’t you find, too, that if you want to do a little bit longer one, once you get through about 3 days, it gets a lot easier, doesn’t it? 

Chef V: Yeah. I have so many people that tell me, “Oh my gosh, by Day 3, I could go two more days!” I always tell people, “Cool. If you live around here, if on Day 3 you’re feeling like a million bucks, come back and we’ll give you two more days and you can keep going on the 5-day cleanse.” But a lot of it is mental. If you think “I have to do 5 days,” by Day 3 you’re like, “Oh God, I’m barely halfway done.” It’s mental, and that’s where a lot of people can choke up.

But if you’re listening to your body and really paying attention to what it’s telling you – because your body will tell you what it needs and what it wants. Your body tells you when you’re hungry. Your body tells you when you need to go to the bathroom. A lot of times people don’t listen to their body. And just like you said with the water – I’m a nutritional therapist, and I counsel a lot of my clients in their health journeys, and you’d be surprised. 90% of people do not drink enough water. Not even close.

I had a client that said, “Oh, I definitely drink enough water.” I have this scale that I would bring around if I’m counseling in person – most of the time it’s via Zoom or telephone – and it tells you what your body water percentage is. This woman who thought she was getting enough was way under the percentage. It was supposed to be around 50-60% and she was about 42%. She was really shocked. She said, “That’s so strange.”

Then we got to the bottom of it and she was counting the green drink and her collagen tea that she was drinking as water. I said, “No, as soon as you mix more than one ingredient with water, it’s no longer water. You need to just be drinking water.” It’s an example of why people are so confused. There’s not really this book that you’re handed as a child or even an adult that tells you, “This is how you need to eat. This is what you need to do. You can have this much water.”

There’s so much noise out there about nutrition and what to eat or not to eat, don’t eat gluten, you’ve got to be vegan, you can’t eat after 7:00. There’s just so much noise out there. It’s really not that hard, but the food industry has made it extremely hard and the diet world has made it extremely hard for people to be healthy and be successful in their food journeys.

Rico: Absolutely. That’s what this project is all about. One more question. How often do you recommend people do a cleanse?

Chef V: Again, this is a question that I get all the time, especially when people have great success on the cleanse. For me, I don’t really do a 3-day cleanse that often. Probably the last time I did one was 2 or 3 years ago. You might think, “What? Chef V doesn’t do a 3-day cleanse?”

But that’s because I’m doing something for myself every day, and that’s the most important thing. The reason why I created the cleanse is because, yes, it works and people are successful. But really, the success and lifelong changes come with what you’re doing every day.

I make sure that I have a green drink or something very healthy first thing that I put in my body. If I’m traveling, I either try and find some place to make a smoothie, or if the hotel will make something, or if not, I go into the grocery store and get a piece of fruit or I eat a salad for breakfast. No one’s ever taught us to eat vegetables for breakfast. Have you ever seen a salad on a breakfast menu? No. You have cereal, pancakes, eggs, bacon, toast. Lots of carbohydrates. What that does is puts your body more at a halt. It’s not really helping your metabolism speed up and turn on.

But when you’re giving your body living nutrients, vegetables, salad – the other day I had a Thai salad leftover in my refrigerator. I’m in a hotel right now in New Jersey, and I didn’t have my green drink, even though my store is not far. I had to do some work in the morning and I was hungry, so I took the Thai salad out and started eating the cucumbers and the carrots and the lettuce out of there. That was my breakfast.

Then I can wait till lunch and I can be a little bit more lax and have a sandwich or a piece of pizza or something. It’s not like you have to eat that way for every single meal. Just try and get more of those nutrients in your body.

And the most important, like I said, is first thing. What are you putting in your body first? That’s the first thing after your body has worked so hard all night to cleanse and detoxify, and then you’re going to shove it down with bacon and sugary orange juice? That’s not really beneficial. It’s really going to make your body have to work harder in order to cleanse and detoxify itself. But if you’re putting something that is healthy and cleansing or detoxifying first thing, again, you’re prolonging that cleansing process that your body is naturally doing, and you’re helping aid that cleanse and detoxification process.

Rico: Such good information. Thank you. I just want to add, I think the point you were making earlier was if you do a clenase and then you go back to eating junk food and don’t change your lifestyle habits, then you’re going to get real toxic again real quick, and you’re going to need to do it again a lot sooner.

But even if you’re trying to have some green drinks every day and be as healthy as you possibly can, a lot of people recommend doing a cleanse with a change of the seasons, maybe four times a year is a good thing to do. But I agree with you; I try and do a daily detox. I exercise and sweat and drink lemon water, drink green things. If you incorporate that into your lifestyle, you don’t have to do a regular full-on cleanse quite so often.

Chef V: Yeah. To further answer your question – sorry, I got a little sidetracked and excited – when people ask me, “How often can I cleanse?”, I say everyone’s different. If I’ve learned anything in the 10 years I’ve been doing this, I know that everybody’s different. Everyone’s different in the way they cleanse, in the way they detox, in the toxins they’ve held on to, in the amount of toxins, the different toxins that they’ve ingested or taken throughout their life.

Some people are way more toxic than others, and they probably do need a nutritional reset more often, and they’re probably not taking care of their bodies in between these 3-day cleanses or whatever. So when people ask me, “Can I do a cleanse every week?”, that’s probably not a healthy option. Your body does need calories. It does need nutrients to survive. The cleanse is low calorie, but it’s very high nutrient.

So I tell people maybe every 3 months, twice a year. At least maybe once a year doing something to nutritional reset. Some people will just take January and do no alcohol for January. That’s a perfect example of a nice little cleanse or reset. There’s different ways. It’s not just one magic potion that works.

But mine has had great success, and I highly recommend people try it if they are feeling toxic. Or maybe they’ve been on medication, in the hospital or something like that. There’s so many things. It’s a question I get asked almost every day. 

So here’s my take on gluten…

That’s because most people aren’t eating the 5 healthy grains I’ll introduce in just a bit. Most people eat heavily-processed wheat products. Which can ruin your health in a few ways.

Most packaged foods contain wheat or wheat flour and are not organic. The wheat flour in processed food is heavily sprayed with pesticides like glyphosate. That’s bad news because glyphosate may be linked to several health problems including poor gut health (this study shows).

So it might not be the gluten you’re having a reaction to in wheat products. It could be the chemicals!

The wheat that’s in products sold in almost every supermarket aisle contains gluten that has been dramatically altered.

Today’s gluten protein molecules in packaged foods are larger than the 5 healthy grains below. And that means your body might not recognize the modern wheat protein like it does ancient wheat. As a result, your body could start attacking the genetically-engineered wheat proteins. This in turn can lead to autoimmune reactions. 

The good news is that you don’t have to completely give up gluten. (Unless you have Celiac Disease.) There are several healthy grains with old-school gluten that may not cause gluten sensitivity after you eat them.

I’ll explain the weird name in a bit. Job’s Tears taste like rice, corn and barley had a thrupple. The chewy grain has a texture like chickpeas and is about the same size as one. 

Also called coix seed, Chinese pearl barley, and Hato Mugi in Japanese, Job’s Tears are perfect for buddha bowls (huge healthy, hearty vegetarian salad). 

Ok, so now the trivia. So Job’s Tears are after the Biblical character whose faith was constantly tested by God. Personally, I’d have an anxiety attack if I went through all the stuff Job did.

Healthy Grain #2: Fonio

You can think of fonio as couscous’s cousin. A tiny grain originally from Africa, fonio doesn’t look all that appealing raw. In fact, it looks like grains of sand. But if you have a delicious sugar-free sauce, fonio will wonderfully absorb the flavors. 

You probably won’t be able to find fonio in most supermarkets. Not even Whole Foods. But like just about anything else, you can find it online. 

Super high in B-vitamins (with the exception of B12, which is only obtained from animal sources), fonio might be a grain you’ll be hearing more about in the future. 

Will it be as popular as quinoa one day? Probably not. But time will only tell. 

Healthy Grain #3: Einkorn

If you love the taste of commercial wheat just like it’s found in the supermarket, einkorn is for you. Only, einkorn is healthier than typical supermarket wheat-based products. 

That’s because it’s nature’s original wheat and it’s never been genetically messed with in the 12,000 years it’s been cultivated. 

I’ll get to the reason why it hasn’t been altered. But first, let’s review einkorn’s taste profile. Like most ancient grains, it’s got a nuttier flavor than commercial, modern wheat. People who love to bake but want to use healthier ingredients love einkorn as a substitute for commercial wheat. 

Next time you try baking banana bread or making pancakes, make them with einkorn flour instead of whole wheat flour. 

The superfood of the Egyptian pharaohs, einkorn was largely forgotten about for centuries. Early farmers discovered other grains that were easier to harvest. As gluten sensitivity has become more widespread, people have taken an interest in this long-forgotten unhybridized good gluten. 

Healthy Grain #4: Freekeh 

Get your freekeh on! Haha. What the frick is freekeh you may ask? It’s known as the King of Grains in the Middle East, the first breadbasket of civilization. 

Raw freekeh wheat does look freakish. It’s green. But after it’s cooked it emerges with a light smoky profile. I’ve heard it described as having a taste similar to fire-roasted cashews. 

As is the case with all 5 ancient grains, don’t eat them plain. Drizzle some olive oil or avocado oil on them. I also like Bragg’s liquid amino acids and a dash of Himalayan sea salt. 

Healthy Grain #5: Teff

OK, so what the “F” is teff? It’s actually the one healthy grain on this list that doesn’t have gluten. That’s right, teff is gluten free. That means that people with Celiac Disease or gluten sensitivity can party with teff.

Naturally rich in calcium and vitamin C, teff are tiny grains that act like a resistant starch. Resistant starches resist digestion in the small intestine. Instead, they ferment in the large intestine (colon). 

That may sound gross. But it’s actually super healthy. Your good bacteria digests these fermented teff sugars and creates short-chain fatty acids. Short chain fatty acids provide us with so many health benefits. But that’s the subject of another Chef V article.

Do You Have To Be Gluten-Free To Be Healthy?

“Let’s talk about bread, baby, let’s talk about all the good things and the bad things that may be…”

With apologies to Salt ‘N’ Pepa (I’m starting to show my age!), bread isn’t as sexy as a topic as, well, sex. But actually in a way it is, because the conventional logic in natural health circles is that if you want to be slimmer and feel sexier, you’ve got to abstain from bread. 

Personally, I don’t have bread every day or even close to every day. On the rare occasion I do eat bread, I’ll choose a gluten-free variety or organic sourdough cracked bread from Trader Joe’s. 

And what about you? How often do you eat bread and other foods that contain gluten? If you’re eating gluten everyday, is this a ticking time bomb? Are you setting yourself up for an autoimmune disease or other serious health condition later on in life if you continue on your gluttonous gluten-filled path? 

Here’s what I think about whether or not it’s necessary to go gluten-free…

Today’s Gluten: A Different Breed 

When wild wheat was first collected some 20,000 years ago, it was much different than the wheat that’s harvested today. Through selective hybridization, wheat has been modified thousands of times. 

Wheat, which contains gluten, the glue-like protein structures, is one of the most complicated species in terms of gene variation. You and I have about 25,000 genes that contribute to our individual traits. Wheat can contain as many as … get this … over 330,000 genes!!!

That’s right, wheat is more genetically complex than human DNA. But it wasn’t always like that. During the last 50-60 years or so, as the industrialization of food became the norm, wheat has become so bastardized that it would hardly be recognizable to the first agrarians who started cultivating it. 

And as wheat has changed, so has gluten. The gluten molecules over the years have become larger. And modern wheat products contain more gluten than their ancient counterparts—gluten has become bigger and badder!

What does this mean for your health? If you’re eating lots of processed wheat and other foods that contain gluten, your blood sugar levels are going to suffer. That’s because modern wheat elevates blood sugar levels higher than ancient wheat varieties. 

In fact, Dr. William Davis, author of the best-selling book from a decade ago, Wheat Belly, compared his blood sugar levels after consuming processed wheat bread compared to an ancient variety of wheat. With his baseline, fasting blood sugar at 84, Davis’ blood sugar spiked to 167 mg/dl after eating modern wheat bread. But after eating a variety of ancient wheat, his blood sugar rose to a far more moderate 110 mg/dl. 

So you see, like most things in life, not everything is black and white. The devil is often in the details as they say. 

The same is true with gluten. Gluten has a bad reputation, and for good reason; 99% of supermarket products contain highly-hybridized wheat gluten. 

And with bigger gluten molecules and more of them, it’s no wonder that many people have bad reactions after eating gluten. 

But not all gluten is bad…

Organic Sourdough Bread: Good Gluten?

Sourdough bread contains gluten. But there’s less gluten in sourdough than in wheat bread. Another benefit of sourdough is that it acts like a prebiotic fiber. Prebiotic fiber is what the good bacteria in your gut feed on in order to survive and thrive. 

When I do eat sourdough bread, I always opt for organic. That’s because organic foods in general have less glyphosate. That’s the potentially-cancer causing herbicide and pesticide in Roundup weed killer that was developed by Monsanto, and the focus of over 125,000 lawsuits and counting.

Organic sourdough bread is fermented and contains more antioxidants than other varieties of bread. Plus, it’s easier on your belly to digest than wheat bread.

Gluten: The Older The Better

Besides sourdough bread, what other foods with gluten may actually be good for you? Try eating ancient varieties of wheat that have not been hybridized to the extent that modern wheat has, and that won’t spike your blood sugar as high.

Einkorn and emmer wheat are a couple examples. There’s also spelt, kamut, farro and teff. 

Considering how used to modern wheat your taste buds are, it may take some getting used to ancient heirloom wheat varieties. 

But if you don’t want to give up gluten and want to take charge of your blood sugar levels and your overall health, give ancient wheat a try. Unless you have a true allergy to gluten such as Celiac Disease, you’ll probably find ancient wheat is easy to digest and won’t cause wheat belly.

Ingredients

  • 2 cups organic mixed greens (arugula, spinach, red leaf, kale, chard, green leaf, or romaine, etc.)
  • 1 cup cooked organic quinoa or brown rice, cooled
  • 3⁄4 cup organic black beans, cooked and cooled
  • 1⁄2 mango skinned and cubed
  • 1⁄4 cup chopped cilantro
  • 1⁄4 small red onion diced
  • 1 small lime, juiced
  • 1⁄2 avocado, skinned, cubed
  • Optional: 4-6oz protein like grilled chicken or salmon.

Directions

Fix two bowls with lettuce on the bottom. Top with plain quinoa (or rice) and beans. Mix mango, onion, cilantro, and lime juice in a small bowl. Add mango mixture to top of salad. Top with avocado, optional protein and serve. Bon Appétit!

Warm Carrot Ginger Smoothie

Warm Carrot Ginger Smoothie – As the weather gets cold, I’ve found myself wanting something loaded with veggie goodness but not cold in my mouth – brrr! So here’s my new recipe, a smoothie that’s a little sweet, a little spicy and comforting on a cold winter morning.

Ingredients

  • 1/2 large carrot
  • 1/2 cup apple juice
  • 1/2 lemon juiced
  • 1 tsp. honey
  • 1 tsp. fresh ginger
  • 1 cup hot water

Directions

Blend all ingredients except hot water in blender. Remove, pour into cup and top with hot water.

Super Smoothie

This Super Smoothie has everything – fresh fruit, avocado for richness, kale for vitamins, ginger for zing, and my protein powder for nutrition. Enjoy it in the morning after your 16 oz. of Organic Green Drink.

  • ½ organic pear,
  • ripe ¼ avocado
  • ½ organic cucumber

I haven’t updated any of my weight loss because I wasn’t really seeing it, but today, I did. Plus, I hate people seeing me like this.

When I left my job it was not because my books had done so well I was going to write full time. In fact, I was just beginning to edit Breach. I left as just a pause, one that ended up being needed, because within a few weeks I hurt my knee and my beloved grandmother passed away. The next year, I released Breach and my hubs said “Ok, you don’t have to go back to work.” BTW, in that time I’d had to have surgery on the injured knee.

Between the surgery and writing full time something happened that I did not expect.

I gained weight.

It wasn’t a lot at first, but it did scare me when I passed the highest I’d ever been. Then I cried when I passed the number I said I never would.

Each year, I gained more weight. All the travel and stress and another surgery and needing something quick and easy started to add up, and in 4 short years, I’d put on around 100 lbs. That’s a lot of weight!!

I felt terrible about myself. I hated going to signings because I hated how I looked and felt. I didn’t FEEL good.

The biggest thing about weight loss that people don’t understand is that it’s not about WANTING to lose weight, it’s about having the MOTIVATION to lose weight. Wanting can lead to depression as you stare in the mirror, and you lose any desire to eat healthy.

Earlier this year I’d finally had enough. I didn’t have the motivation, but I was sick of it all. Olivia Kelley-Santos had told me about her green drink that she drank that made her feel good, so I went on and saw they had a 21 day detox and I said “That’s what I need. That’s the push.”

How To Effortlessly Boost Collagen Levels For Beautiful Skin


You’ve heard of collagen and know that it’s good for your skin. But let’s take a deeper dive with Veronica Wheat, the “V” in Chef V and find out exactly what collagen is and how to boost levels of it in your body so that your skin looks more youthful. And let’s improve our skin in healthy ways.

What does scaffolding and skyscrapers have to do with your skin?

Well, in order to understand collagen, you first have to imagine that your skin and bones also have a matrix (obviously on a much smaller scale, like invisible small).

Collagen Basics For Skin

The stretchy connective tissue that makes up your skin requires a strong, structural framework, just like skyscraper scaffolding. The framework that prevents your skin from completely sagging to the floor is called the extracellular matrix.

And there’s something that needs to provide structural integrity to this extracellular matrix. And that something is collagen—the most important protein in connective tissue (skin), not to mention your bones.

Out of thousands of proteins in the human body, collagen is by far the most abundant. Roughly 30% of all protein in the human body is one type of collagen or another.

There are 28 different collagen types, but when it comes to youthful-looking skin, we’re only concerned with collagen type I & III.

How Aging Affects Collagen

The aging process can be cruel to the skin. And what’s going on under the hood of our skin, so to speak, is that by the time you’re 25, your collagen levels in your body are already on the decline.

In fact, starting around age 30, 2% of our collagen stores will be depleted. By age 40, we have lost roughly 15% of the collagen we had when we were born. (But don’t let that depress you if you’re celebrating your 40th soon!). Then, once we turn 60, say goodbye to roughly 50% of your original collagen.

Going through menopause is especially a collagen killer. That’s because when you go through menopause, your estrogen levels plummet. Estrogen is vital for collagen production.

So there’s good news and bad news with collagen. I’ll start with the bad. While our bodies can make new collagen, as we age, we lose more of it than our body can rebuild and repair. And not only that, the collagen protein fibers that we do have start getting weaker. That’s why wrinkles develop.

The good news is that there are simple nutritional interventions that can help our collagen build back better.

Chicken Bone Broth



I’m not a strict vegetarian but I rarely promote meat. One rare exception is bone broth because it contains collagen. Bone broth contains collagen protein because the process of slow cooking bones for many hours releases collagen from the bones. So by consuming the collagen from animal bones, you’re helping revitalize your own body’s collagen.
In addition, bone broth contains other nutrients that help with collagen growth and repair such as:

Hyaluronic acid



According to the Cleveland Clinic, it helps skin stretch and flex and reduces skin wrinkles and lines; also reduces visible scars.

Chondroitin



This compound plays a major role in connective tissue and is essential for normal skin health and regeneration.

Glycosaminoglycans

Known as GAGs, these complex sugars—not the unhealthy kind you might think of in junk food—hold nearly 1,000 times their own weight. Translation: a moisturizing weapon for your skin you’ve never heard of. GAGs also support collagen and elastin, another important skin structural protein.

In addition, bone broth contains a great balance of minerals that support collagen production. But what if you’re a vegetarian? Thankfully, there are non-meat, collagen-building foods…

Green Leafy Veggies

Nearly everybody knows that green leafy veggies are among the healthiest foods on Earth. (Can’t stand eating them? Then drink them!)

But what you may not know is that green leafy veggies are a great source of a vitamin that hardly gets any attention: vitamin K. And it turns out that vitamin K is really effective at building that skin-and-bone scaffolding matrix I was talking about earlier, research shows.

Citrus Fruits & Berries

Citrus and berries contain good amounts of vitamin C. And vitamin C is a precursor (building block) of collagen. So make sure you’re getting both citrus and berries in your diet everyday.

Collagen Powder

Very few people like sipping on a piping hot mug of bone broth in the summer. And many people don’t like the meaty, savory taste of bone broth everyday. But you can get the benefits of collagen without broth simply by adding a scoop of collagen powder to a smoothie (or even your Green Drink!).

More and more non-meat-sourced collagen powders have become available, including marine collagen powder (derived from fish) and even plant-based collagen powders.

Botox For Collagen

And finally, no article about more youthful skin would be complete without mentioning botox. OK, so you can’t eat botox. That would be bad, and it’s the reason why babies can’t eat honey for the first year of life. (Both botox and honey have a toxin called botulinum.)

Obviously, people can go overboard with the botox treatments. But if you’re in need of major wrinkle reduction, there’s no doubt that Botox helps the skin build collagen. But don’t think that by getting a Botox injection, it gives you a free pass to eat like crap! You need to eat a high antioxidant diet every day otherwise the effects of Botox may be short-lived.

Bottom line, there aren’t enough long term studies on the effects of botox injections. We recommend getting as much collagen as you can in your diet, limiting your exposure to botox and trying a more natural route.

Let’s talk about protein. Not the protein you get from food, but the protein that makes up who you are. Your body has hundreds of thousands of different proteins. The reason why we look older as we age is that our collagen denatures, weakens and shrinks. It gets weaker and weaker every year. Have you heard the term “gut microbiome?”

On a simple level, it’s a collection of the trillions of bacteria—both good and bad—that are living rent-free mostly in your large intestine (colon), and to a lesser extent in your small intestine. These bacteria help digest our food.

And while it’s kind of disgusting to think about it, when the bacteria help us digest our food, they poop just like us. You see, when friendly bacteria eat specific types of foods, they produce a healthy type of fatty acid called short-chain fatty acids (SCFAs).

Feeling awesome day in and day out depends on producing enough SCFAs. Most people think that it’s probiotics that are vital for overall health. And by now, who hasn’t heard of probiotic supplements? Probiotics are specific strains of beneficial bacteria that have been clinically proven to offer health benefits to the host (the person taking the probiotic). This assumes the probiotic is of high-quality and can survive the acidic environment of the stomach.

But the surprising thing is that it’s not just the probiotics that provide us with good gut health. It’s their metabolic byproduct (poop), the short chain fatty acids I was just talking about.

Having good health means that you should have at least 85% friendly bacteria. When your gut microbiome is at that level, the friendly bacteria prevent the potentially unfriendly bacteria from crashing the party in your gut and leading to poor digestion, bad skin, brain fog, infections, and potentially chronic illnesses.

You might think that popping a probiotic pill is all you need to do to achieve great gut health. But that’s only one small piece of the puzzle. Here are 3 things I do to support my gut and overall health.

Organic Green Drink: A Natural Prebiotic

Every morning, the first thing I do after I wake up (and use the potty) is drink water and then have a Chef V Organic Green Drink about 20 minutes later. I’m not using this space as a shameless promotional spot. This routine that Brandon (my hubby) and I have been doing for over the past decade has served us well. Doing this not only continues the detoxification that occurs while we sleep, but it also does our gut good.

I’m talking about fermented foods like no-sugar-added plant-based yogurt (cashew, coconut), sauerkraut (fermented cabbage), kimchi (sauerkraut with a spicy kick), and fermented soy like miso.

There is one fermented food that I think is overrated: kombucha. Some brands of kombucha have way too much sugar and they may not contain enough probiotics to contribute to gut health. But there are some brands of kombucha that are low-sugar. Just don’t rely on kombucha alone for adding more good bacteria to your gut microbiome.

Avoid Unfriendly Bacteria Triggers

My third easy tip for having better gut health is avoiding certain foods and drinks that stimulate the growth of unfriendly bacteria. Here’s my “Don’t Eat This” list:

  • Gluten (avoid most products made with wheat)
  • Dairy (avoid conventional dairy unless it’s made with A2 protein and/or fermented organic, grass-fed dairy)
  • Beer (most of which contains gluten)
  • Sugar (for the most part, the only sugar I get in my diet comes from fruit; on occasion, I’ll add coconut sugar to my tea or healthy dessert)

So there you have it … 3 easy ways to support your gut. And when you support your gut microbiome, your “feel-good” hormones and neurotransmitters will be better activated. That means a healthier, happier you.

5 Tips For Surviving The 2022 Holiday Season

The holiday season is a paradox: it’s the best of times and it’s the worst of times. It’s the best of times because everything is so festive and beautiful. 

But the holiday season creates anxiety for many people, whether it’s getting together with family that you don’t see eye to eye with or running around all over town buying last minute gifts. 

In the cold weather months, you’re more likely to get sick than you are in the summer. Yes, some of that has to do simply with weather; viruses thrive in colder weather and are able to circulate and replicate in stagnant, indoor air. But stress is just as much of a contributing factor, if not more so. 

So what can you do to manage your stress this time of year? Follow these 5 tips for surviving the holiday season…

Take Mini Meditation Breaks

Not much of a meditator? Does keeping the mind free of thought seem like an impossible task? The good news is that you don’t need to be a Zen master to quiet your mind. And you also don’t need to meditate for hours upon end to become one with the universe. All it takes is a few minutes of consciously focusing on inhaling and exhaling. Stress managed! It’s really as simple as that. 

And if while you are sitting still (a chair is fine; you don’t have to go into deep Lotus pose), thoughts creep in, that’s fine. Just bring your mind back to your breathing. Five long seconds inhaling, and the same on the exhale. Try to inflate your chest and belly like a balloon on the inhale. Deflate on the exhale. 

Still thinking about all the bills you have to pay while you’re breathing? It’s fine. Do try and not let those worries consume your thoughts. But just remember the name of the game is not to rid your mind completely of thoughts. Rather, the goal is to focus on your breathing. Because breathing is healing. 

Take Mini Exercise Breaks 

Some people make the excuse that they don’t have the time to go to a gym or take a class because they’re so busy. But nobody should be so busy that they can’t take the time to take a mini-exercise break. 

Something fun I recently started doing is dancing for 3-5 minutes in my home while listening to a song on Pandora or Spotify. I also have a standing desk/desk riser and while I’m pecking away on my laptop, I sashay my hips from side to side. Yes, shaking your groove thing is possible while working. 

As the saying goes, sitting is the new smoking. Standing all day while working is impossible. And like sitting all day, standing for several hours is also bad for circulation. But alternating between sitting and standing several times a day is ideal for good blood flow and keeping the spirits high. 

You can also set a timer and do a three-minute yoga routine every 90-120 minutes. The bottom line is that you don’t need to exercise for a long time in order to manage holiday stress. You can do a few mini movement sessions per day and reap the same benefits.

Eliminate Processed Carbs

This might be the holiday survival tip you dread. If you struggle with eating too many carbs, the good news is that you don’t have to completely quit carbs. I’ll explain in a sec. 

But first, let’s take bread as an example. For people who follow a low-carb lifestyle (Keto Diet), bread is a no-no. Eating bread raises blood sugar levels and puts more demand on the pancreas to release insulin. 

The more bread and other processed carbs you eat, the more insulin your body needs to keep blood sugar levels steady. If you keep eating bread, bagels, muffins, cereal and other baked goods made with white flour (wheat flour isn’t much better for blood sugar levels), your cells will become resistant to insulin. This places you at a higher risk of developing type 2 diabetes. 

But not all bread is created equally bad. About 99% of supermarket breads are empty carbs. But artisanal sourdough bread contains beneficial bacteria for your gut. You can also buy 100% whole rye bread which contains a lot of fiber. When you see that a bread contains at least a few grams of fiber, it means that the blood sugar spike won’t be as high as bread with little or no fiber. 

If you’re at brunch and you’re considering getting a stack of pancakes, think of the pancakes as a giant bowl of sugar. Foods prepared with white flour break down very quickly, metabolizing into sugar. 

The problem with this is that sugar suppresses the immune system. Eating a tiny piece of cake at a holiday party is no problem. But if you have trouble controlling your portion sizes, it’s better to just say no than to indulge. Studies have shown that consuming sugar puts your body’s infection-fighting white blood cells to sleep for several hours!

So instead of eating refined carbs, eat whole grains like wild rice, farro, emmer wheat and quinoa (technically, quinoa is a seed but let’s not split hairs).

Take A Social Media Detox

If you’re feeling anxious this time of the year simply because it’s the holidays or for whatever other reason, consider putting your phone down. 

Make a phone call, text if you have to, but in order to feel more peaceful, I recommend chilling out on social media for a while. 

It shouldn’t come as a surprise that recent studies reveal that social media damages teenagers’ mental health. Even if you’re not a teenager anymore, chances are that keeping up with the Joneses or Kardashians on social is negatively impacting your life. Unless you’re using social strictly for work, consider a 3 Day Cleanse. (And if your body needs to physically detox, check out Chef V’s Cleanses.)

In the Dalai Lama’s Art of Happiness book, one of his tips for being happy is not to compare yourself to anybody else. When you’re on social media, it’s hard not to compare yourself to others. 

No News Is Good News 

Tip #5 for surviving the holiday season is much like my advice to do a social media detox. Unfortunately, news and politics have made us divided and no more is that evident than on social media. In addition to detaching from social media to avoid the news, do the same from cable news, newspapers, talk radio and magazines. 

And last but not least, under no circumstances should you discuss news and politics with family who don’t share your point of view. It’s not worth the energy. The more you get triggered, the more stress hormones circulating through your bloodstream. When stress hormones flood the blood, digestion slows down. And when digestion becomes impaired, you’re more likely to pack on the pounds. In light of that metabolic fact, is it really worth arguing about who should be president?

Boost your Immune System: Eating Healthy

Flu season might be severe this year, according to the medical community. So how to avoid getting it?

There’s no cure right now for the flu and the best way to fight it off is to increase your resistance. And that means eating healthy to boost your immunity.

I’ve built my little Green Drink and Cleanse/Detox empire over the last decade in part by telling people what to eat. A big reason why I created my Making Cleansing Easier Cookbook along with all the other Healthy Eating Resources you get when you’re on a Green Drink Plan is because when I first started Chef V, I was asked the question so many times, “Hey Veronica, what should I eat?”

More than anything, you need to keep eating healthy. When you’re stuck at home and bored, you start eating more.

Don’t buy what you don’t normally eat. Don’t stock up on cookies and chips and snacks but stick to healthy choices. If you don’t eat junk food normally you shouldn’t be eating it now.

Time to clean your body

#1: Give Intermittent Fasting A Try

One of the reasons my hubby, Brandon, and I have kept the weight off is that we are doubling down on intermittent fasting. Intermittent fasting not only works for weight loss, it makes your mind sharper and may even support your immune system and prevent infection as this study suggests. 

I’m not saying that if you do intermittent fasting, you won’t get the flu. But it’s interesting that some immunologists are exploring its protective effects. How intermittent fasting supports the immune system is the same way it can help you prevent weight gain while working from home. 

You see, when you don’t eat anything for 16 hours—the best way to do intermittent fasting is to limit your calorie-intake window to 8 hours a day, i.e. 12 noon to 8 p.m.; Brandon and I shoot for a 17-hour fast most of the time—your body starts repairing itself. Digestion takes a ton of energy. By giving your digestive system a rest, your body can focus on fixing itself. This process is known as autophagy. 

Technically, autophagy does not directly contribute to weight loss. But by making your metabolism more efficient, fasting can lead to weight loss. And the great thing about intermittent fasting is that if you feel like snacking while working from home, you don’t have to feel guilty about it. As long as you’re eating during your 8-hour window, snack away.

#2: Lose Weight Working At Home By Eating More!

If you work a normal 8 or 9 to 5 day, your first main meal will be at around noon. Actually, before your first meal of the day, I recommend drinking some water with trace minerals to keep your energy up first thing in the morning. You can also have green tea or unsweetened black coffee if you must have your caffeine fix. Then, between 11:30 to noon, break your fast with Organic Green Drink

By having 8 to 16 oz of Green Drink, you’ll gently awaken your digestive system and flood your cells with high-nutrient-density leafy greens. 

After having your Green Drink, wait about 15-30 minutes, then go to town. Have at it. Eat all you want until your belly is full but not too stuffed. By eating a large meal, you’ll eliminate the temptation for frequent snacking. Like I said, snacking during your 8-hour eating window isn’t a nutrition faux-pas. But in general, it’s good to give your insulin-secreting pancreas a rest in between meals as well as your other digestive organs. 

If you eat your first main meal at noon, I recommend having your second large meal early in the evening like at 5 or 6. Your last meal can then be a light but satisfying one like yogurt with nuts and berries. 

Many people make the mistake of not eating enough at their main meals. This is what leads to over snacking in between meals and late-night snacking, which is terrible for your metabolism. Eating too often prevents your gut bacteria from being able to be swept down from the small intestine into the large intestine (colon). See my article on SIBO for more on this subject.

#3: Are You Hungry Or Just Bored? 

True hunger is when you’ve gone 16 hours or longer without food. If your stomach is sending signals to your brain while you’re working that you’re hungry, don’t listen to the message right away. 

Your brain—and belly—could be the victim of a false signal. This is especially true if it’s only been two or three hours since you last ate. If your last meal was large enough and contained the correct ratio of macronutrients (a little bit of healthy fats like avocado, and sufficient protein and low-starch carbs like quinoa and veggies), then you shouldn’t need to eat more food. 

You can satisfy your sweet tooth after a meal by having a large handful of berries and a tiny piece of dark chocolate. This is why I emphasized eating a big meal above. 

But if you’re accustomed to snacking every couple hours, it’s probably not true hunger you’re experiencing. What’s likely happening is that the yeast in your gut loves feasting on the sugars in your small intestine, from the crackers and other carb-heavy snacks. And after the yeast digests your yummy snack, it will tell your brain to feed it some more. After all, your brain and gut operate in a continuous feedback loop (no pun intended). 

If you feed your gut low-sugar, low-starch foods, the yeast in your gut won’t proliferate; it will be kept in check by your friendly bacteria. And that means your belly—when properly nourished—won’t send your brain a signal to snack yet again. 

#4: Sleep, Exercise, and Stress

One of the most powerful weapons in your immune-boosting arsenal has to be one of the easiest – sleep! Not getting enough sleep can ruin your immune system. (If you have difficulty sleeping, a blended juice cleanse might be just what you need!)

Exercise, even in small amounts, is also great for keeping your immune system ready to go. Not only will exercise support a stronger immune system, but it can help you keep your weight low – and as we mentioned, high weight is an immune system risk.

One of the most important things is, of course, to simply not stress out too much about it. It might seem counterintuitive, but worrying too much about your immune system can… weaken your immune system. The mind and body are connected, so stress on one will affect the other. It sounds crazy, but stress is never good for your health in any way.

It’s so easy to make your own pumpkin purée. Just cut the top off any pumpkin, cut into 4 quarters and remove all the seeds and guts. Line a baking sheet with parchment paper. Place the pumpkin skin side down on the baking sheet. Place in the oven for 45 minutes at 350 F (do not use oil). Remove from the oven, rest for 5-10 minutes and peel off the pumpkin skin.

Place your pumpkin in Vitamix or blender and puree. Use this purée for my recipes or any recipe that calls for canned pumpkin puree. The difference is AMAZING! You can store in the refrigerator for up to 5 days or freezer for later use.

Chia Seed Pudding

Chia seed pudding is great for breakfast, and kids love this recipe. Chia seeds are tiny superfood heroes. They come in either white or dark brown/black and have a huge nutritional profile. The contain Calcium, Manganese, and Phosphorus, and are packed with fiber, protein, and healthy omega-3 fats. They are basically tasteless so you can add them to nearly any kind of dish.  – Veronica

TOTAL TIME: 30 Min

Ingredients

  • 1 cup chia seeds
  • 2 1/2 cups Chef V’s Raw Almond Milk
  • 1 tablespoon raw coconut nectar (I like Coconut Secret)
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon, optiona
  • Pinch sea salt

OPTIONAL TOPPINGS
Fresh fruit, dried fruit, shredded unsweetened coconut, raw nuts

Directions

Place all of the ingredients except for toppings in a bowl and stir until well combined.

Let the mixture sit for 5 minutes, then stir with a fork. Repeat this process every 5 minutes for about 30 minutes, or until the chia seeds have soaked up all the liquid.

Chill pudding for 2 hours before serving. Top with your favorite garnish and dig in.

The 5 Best Natural Supplements To Prevent Traveler’s Diarrhea

After a very long two years, people are once again traveling all over the world. But when you visit an area of the world with microbes your body isn’t used to, there’s a good chance you can get an unwanted souvenir: traveler’s diarrhea. Sharing her wisdom gained by visiting Southeast Asia, Veronica “V” reveals her favorite natural remedies for prevention. 

It’s a near certainty that if you travel anywhere in the world, especially somewhere with a developing economy, your digestive system will be attacked by a pathogenic bacteria, virus or parasite. In fact, according to the Cleveland Clinic, up to 70% of people who travel abroad will become stricken with traveler’s diarrhea.

The good news is that the overwhelming majority of people who experience loose watery stools will have a mild case that will go away on its own after a few days.

So there’s no reason to panic about traveler’s diarrhea. Go on your trip and fully experience the food and culture! Don’t let fear of the runs stand in your way. Life’s too short to eat all your meals in the hotel restaurant. Live a little and eat some street food you’ve never tried before.

Still, experiencing traveler’s diarrhea is no fun. Most of the time, the culprit is bacteria. In fact, according to the journal of Clinical Infectious Diseases, bacteria is responsible for roughly 90% of all traveler’s diarrhea cases, with e. Coli being the pathogen most likely to cause it.

Viruses are to blame for about 10% of all cases. Nasty parasites might receive all the gory attention because they can wreak havoc on the digestive system and they can be really hard to get rid of. But thankfully, parasitic causes of traveler’s diarrhea make up a tiny fraction of all cases. The bad news is that with traveler’s diarrhea that lasts for over 2 weeks, the cause is almost always a parasite.

But fear not because I have 5 supplements that may help prevent being glued to the porcelain throne during your trip (or when you come home).

Probiotics

Having a lot of friendly bacteria in your gut and lots of different varieties (strains) of probiotics are crucial for defending against pathogens. But not any probiotic will do. There’s one in particular that’s been the focus of many research studies on diarrhea prevention or treatment. And it’s the only probiotic that’s a yeast rather than a bacteria. It’s called Saccharomyces Boulardii, or S. Boulardii for short.

It comes in capsule form and you don’t need to refrigerate it so it’s really convenient for traveling. It takes a few days to fully build up in your gut so I start taking it about 4 days before I leave for an overseas vacation. I’ll continue taking it as long as I’m away and then I’ll stop taking it 3-5 days after I get back just to make sure all’s good back there.

You can take other probiotics at the same time you’re taking S. Boulardii. But for diarrhea prevention, only S. Boulardii is backed by extensive research.

Oil of Oregano

So the next supplement that may help prevent ruining your bucket-list trip is oil of oregano. It’s a very potent natural antibiotic. And remember, the most likely cause of traveler’s diarrhea is a bacteria (which is caused by consuming contaminated food and/or water, or by touching contaminated surfaces).

You can tell that oil of oregano is potent just by the taste. It’s so strong so don’t say I didn’t warn you. Some people put oil of oregano drops directly on their food just in case the food is contaminated. But talk about ruining a meal! I prefer to use it away from meals so I can actually taste the food.

It’s probably not a good idea to take oil of oregano for a very long time. So if you’re traveling for a few weeks or longer, use it sparingly, like maybe every other day or every few days.

Oregon Grape Root

Another herbal tincture, Oregon Grape Root contains the active ingredient berberine, which has been shown in research to help prevent diarrhea, and not just against bacterial pathogens that cause it but also viral, parasitic and fungal. So it’s like a broad-spectrum antimicrobial. And it doesn’t taste as harsh as oil of oregano.

Activated Charcoal

This is what they give to people (usually kids) in the ER at hospitals who accidentally swallow something poisonous. Activated charcoal, which is a black odorless powder,  binds to toxins and removes them out of the digestive tract. Personally, I wouldn’t use it for prevention but it’s one natural supplement I would consider for treating traveler’s diarrhea.

Grapefruit Seed Extract

GSE is a liquid that some people squirt directly on their food to neutralize any potential pathogens. It doesn’t taste as harsh as oil-of-oregano, but it’s pretty close. Again, I wouldn’t want to alter the flavor profile of a meal I’m enjoying just to prevent a mild case of the runs. So GSE is something I’d use away from food or for treatment.

At the end of the day, a mild case of traveler’s diarrhea is no big deal. It’ll usually go away on its own within 1-3 days. But if you’re on a very long bus or plane ride, I wouldn’t blame you if you took an over-the-counter remedy to stop things up. I should also point out that if you do have bloody loose stools, call your doctor right away to get checked out.

But no matter what … keep on traveling!

2 Easy Hacks for Lowering Blood Sugar Levels

Living with diabetes isn’t a life sentence. In fact, it is possible to reverse diabetes. Sure, it’s going to take a lifestyle adjustment, including getting regular exercise and diet modification. But with these 2 easy hacks, you’ll be on your way to managing your diabetes.

Hack #1: take a walk

A simple way to have your blood sugar return to normal after a meal is by taking a walk. It doesn’t have to be a super vigorous hike, but getting enough exercise is important for managing diabetes and this is especially true if you’re sedentary for most of the day.

Even more important than the advice to exercise is learning when to exercise. And if you only have time (or the motivation) to move your body once per day, research strongly suggests you should do it after dinner.

Most people eat their heaviest meal at night. And the biggest spike in blood sugar occurs after eating a large meal, especially if it contains lots of carbohydrates that have the potential of converting into sugar. (Think: pasta, bread, rice and other starchy carbohydrates.) Walking after a heavy meal is a proven way to improve blood sugar levels.

Consider this study from New Zealand. Two groups of people, most of whom had type II diabetes for 10 years, were compared. One group walked for 30 minutes a day for two weeks. The other group went for a 10-minute walk after each main meal. The results: blood sugar levels were significantly lower when participants walked after meals compared with the group who only went for one walk a day.

Meanwhile a different study compares exercising before a meal and after. The group with the lower blood sugar levels exercised after their meal, not before. This supports the first study that it’s vital to move around after eating a meal.

Hacks 1.1 and 1.2: When weather is bad, Use an App and watch lots of TV (while moving)

Hack 1.1 within this hack is to either set a timer or use an app to alert you to move and remind you to be more active. It’s important to emphasize that you just need to go for a walk. Not a power walk. And not a steep hike, or a jog. Or, God forbid, wind sprints. Just a casual stroll after each meal is all it takes to lower blood sugar. The problem with this solution of post-meal walks is that many of us are so busy that we often forget to go for a walk. The gravitational pull of the couch is so strong when you’re tired at the end of a long day. All you want to do is binge watch your favorite Netflix show.

Hack 1.2 is to beat the weather with a treadmill, or just walking in place.  Weather can prevent some people from walking after a meal. If it’s -30 degrees outside, the last thing you’re going to want to do is go outside. The easy hack: walk in place while you watch TV.  If you can make it a habit to just walk in place (or if you have a treadmill at home) while you watch TV, before you know it, you’ll have walked 30 minutes or even an hour. And you don’t need to be drenched in sweat to reap the benefits of a post-meal walk.

To reiterate, just move. Walk at a comfortable but not laborious clip. That’s all it takes to normalize your blood sugar level after a meal.

Hack #2: Eat Healthy Cereal – Easy Way to Lower Blood Sugar

Breakfast cereal is one of the most popular meals in the morning for people who need to quickly wolf something down before school or work. But most breakfast cereals are loaded with heavily processed grains (which are carbohydrates.) In fact, using as an example, Kellogg’s Raisin Bran, just one cup (and who eats just one cup?) contains almost 50 grams of carbs. That means if you pour yourself a big bowl of cereal in the morning, and add some banana slices you’ll start your day with over 100 grams of carbs. And that’s not even counting the sugar from milk.

It’s no wonder that many people by 10:30 or 11 in the morning need their third cup of coffee just to stay awake and be productive until it’s time for lunch. That’s because high carb breakfasts such as cereal and bagels, toast, muffins, danishes, donuts, etc. contain too many quick-burning carbs. These carbs quickly spike blood sugar levels. And what quickly goes up must come crashing back to Earth. It’s these blood-sugar fluctuations that produce mood swings, not to mention chronic metabolic disorders such as type II diabetes.

Proof Green Drink Works for Weight Loss

So here’s the truth and the proof about Green Drinks for weight loss….

Let’s start off with this study on kale. Besides numerous beneficial effects on health, it lowers your blood sugar levels after a meal. What does that mean for weight loss?

When blood sugar levels are high, your cells can no longer allow sugar from the bloodstream to enter. And as a consequence, the excess sugar gets stored as fat by the liver.

Unless you plan on doing several rounds of sprints or go for a long-distance run, that extra fat’s going to go where you least want it.

For this reason, kale is considered a superfood for people with type 2 diabetes.

Green Drinks for Good Gut Bacteria

Remember I was saying that when you eat a donut or other junk carb in the morning (or anytime of day), it feeds yeast in your gut? More specifically, it causes yeast to proliferate (multiply in number). And what this means is that you’ll end up with too much bad bacteria in your gut.

But this study proves a vegetable juice-based diet improves gut health. In the study, the participants consumed only a vegetable/fruit juice blend for three days. On the fourth day, the researchers observed a significant decrease in weight and body mass index.

And this weight loss was maintained until day 17. The only reason it wasn’t sustained for longer is that from day 4 onwards, the participants resumed their normal diet.

In addition, by day 4, the researchers noticed less harmful strains of gut/stool bacteria and more beneficial bacteria. Having enough friendly critters in your gut, as creepy as it may sound, is necessary for sustained weight loss.

Here’s one more study I’ll leave you with for now. It says that diets containing green leafy vegetables improve liver fatty acid profiles. The study is the first one to prove how green leafy veggies improve the liver health in animal predisposed to developing hypertension.

Your liver has to be in optimal condition in order to properly detoxify and break down dietary fat. If you have a “sluggish” liver, you’ll have trouble losing weight.

One of the green veggies in the study is collard greens, which is in my Green Drink. The study concludes that green leafy veggies not only improves liver health but also lowers the risk of cardiovascular disease and high blood pressure.

Mediterranean Butternut Squash + Carrot Stew with Quinoa

My Mediterranean stew is made with mellow spices for a flavorful and healthy meal.

This stew can be prepared a day ahead. It's great to take to work or enjoy for dinner the next day, or for a warm and healthy meal for the kids to come home to and easily reheat.

Ingredients

  • 2 tablespoons cold-pressed olive oil
  • 1 cup white onion, diced
  • 3 cloves garlic, minced or pressed
  • 2 teaspoons sweet paprika
  • 1 teaspoon sea salt
  • 1/2 teaspoon each: black pepper, ground coriander, ground cumin, ground turmeric, ground ginger, cayenne pepper
  • Pinch saffron
  • 1 cup filtered water
  • 1 cup cooked lentils (if canned, do not drain: if cooked, save 1/4 cup of the cooking water)
  • 2 tablespoons fresh lemon juice
  • 3 cups (about 1& 1/2 pounds) cubed butternut squash
  • 2 cups peeled carrots, cut into 3/4 inch slices

QUINOA

  • 1 tablespoon cold-pressed olive oil
  • 1/2 cup diced white onion
  • 2 garlic cloves, minced
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground turmeric
  • 1 cup uncooked quinoa, rinsed and drained
  • 2 cups filtered water

OPTIONAL TOPPINGS

  • 1/2 cup chopped fresh cilantro
  • 1/4 cup chopped fresh basil

Directions

First, prepare the stew. Heat the oil in a large saucepan over medium heat. Add the onion and sauté until soft, stirring often, for about 15 minutes. Add the garlic and stir for 1 minute. Add the dry spices. Add 1 cup water, lentils (with liquid from the can or reserved 1/4 cup cooking water), and lemon juice. Bring the mixture to a boil. Add the squash and carrots. Cover and simmer over medium-low heat. Stir occasionally and cook for about 20 minutes, or until the vegetables are tender. Keep warm until the quinoa is finished, or cover the stew and refrigerate until ready to serve.

Next, prepare the quinoa. Place the oil in a large saucepan over medium heat. Add the onion and cook, covered, until translucent, about 3 to 5 minutes, stirring often so the onion does not burn. Add the garlic, salt, and turmeric, and sauté for one minute. Add the quinoa and stir for one minute. Add 2 cups of water. Bring to a boil and then reduce the heat to medium-low. Cover and simmer until all the liquid is absorbed and the quinoa is tender, for about 15 minutes.

To serve, stir half the cilantro and half of the basil into the warm stew. Spoon the quinoa onto a platter or divide among bowls and form a well in the center. Spoon the stew into the well and garnish with the remaining cilantro and basil, if desired.

Glycemic index and Glycemic load: Know the Facts.  Understanding will help you choose the healthiest foods and avoid  the traps of false advertising. Chef V explains. Vital information for people with diabetes and those who want to avoid getting it.

Just the facts/bottom line:
Pick foods with a Glycemic index under 60
and a Glycemic Load under 15.
Look for lower numbers.

I feel sorry for carrots. Watermelon, too. You see, these two healthy foods are often vilified by health extremists for supposedly having too much sugar. They argue that carrots and watermelon rank very high on the glycemic index.

Before I come to the defense of carrots and watermelon, let me explain what the glycemic index is….

What is it and can it help manage diabetes

Put simply, the glycemic index is a ranking of foods (and drinks) with carbs. A score of 70 or greater is high. And a score of 56-69 is medium on the glycemic index (GI). A low score is 55 or less. The higher the number, the more quickly the carbs in foods converts into sugar in your blood. Veggies like broccoli have a score of 0. Watermelon ranks 72. And raw carrots is almost at the top of the charts: 93. Considering that a croissant ranks 95, does that mean having a carrot is almost as bad as indulging in a French pastry?

No, it doesn’t. While the GI can be a useful tool for managing diabetes, it does have some shortcomings.

But it has Limitations

The Glycemic Index measures the potential effects of carbs on your blood sugar within a two-hour window after eating. What’s the problem with this? Well, if you have diabetes, eating carb-rich foods can affect your blood sugar levels for up to four hours.

Second, the GI often does not take into account the precise amount of carbs eaten at one time. When the GI was established in the early 1980s, the researchers created it to analyze the effect of carbs on blood sugar (glucose) like a bell curve. In other words, it’s not scientifically very accurate. And not just because it’s only a two-hour window. But also, because it measures the food following a 12-hour fast. Moreover, the amount of carbs that it tests to rank it on the GI scale is approximately 50 grams. Thus, depending on the food, even though it might rank high on the GI, it doesn’t mean it’s going to spike your blood sugar.

A more accurate measure to use is the glycemic load. The glycemic load takes into account how much carbohydrate is eaten in one sitting. That’s the biggest and most important difference between glycemic index and glycemic load.

Why the glycemic load is more accurate

You can consider the glycemic load as the glycemic index 2.0. And the three tiers of the glycemic load (GL) you should be familiar with are 0-10, which is low; 11-19, medium; and 20 and above which is high.

Unlike the glycemic index, If a certain food ranks high on the glycemic load scale, it’s safe to assume it’s not good for diabetes management. The GL is figured out by taking the amount of grams of carbs in a food and multiplying that by the food’s glycemic index score. Then, you take that number and divide by 100.

But you know what, don’t worry about potentially confusing diet math right now. What’s more important is understanding this biggest difference between glycemic index vs load. And let’s use as an example the one veggie and fruit that often get a bum rap. I’m referring of course to carrots and watermelon.

Remember, watermelon ranks high on the GI at 72. But it’s glycemic load is low, only 7. And carrots, despite having a potentially blood-sugar spiking score in the 90s only has a GL score of 1. Yes, that’s not a typo. In other words, according to the glycemic load score, carrots have little risk of converting into blood sugar.

How can this disparity exist? Isn’t it really confusing if you’re trying to manage your diabetes? The answer to the second question: yes, totally. I feel your pain. When I was studying for my certified nutrition therapy coursework, I was confused by the difference between the glycemic index vs load. But, again, the simple difference between the two is that the glycemic index does not take into account serving sizes. That means if you only eat one large raw carrot, that carrot may have a negligible effect on your blood sugar.

More reasons why the index isn’t the holy grail of diabetes management

The reason why the glycemic load of watermelon and carrots is so low is that both of them contain no fat and protein. Foods that contain fat and protein have a lower glycemic index. Because theoretically, protein and especially dietary fat can reduce the effect of carbs converting into sugar. This is why peanut butter M&Ms have a relatively-low score on the GI: 33. Does that mean you should eat more peanut butter M&Ms and less watermelon and carrots? Of course not. This exemplifies how the glycemic index isn’t always a great tool for managing diabetes.

In addition, the glycemic index as well as the glycemic load do not take into account the cooking methods of a particular food. For example, did you know that al dente pasta has a lower glycemic load than soft, mushy noodles? That’s because your digestive system has to work harder to break down al dente pasta. Also, the indexes don’t account for how ripe or raw a food is. Take bananas, for example. Green-tipped bananas (eaten with nothing else) will cause less of an insulin response than a really ripe banana.

That’s why yet another index, the insulin index, might be an even better determinant of the effect of a food on your blood sugar level. According to the insulin index, pasta really isn’t that bad for you. That’s not to say if you have diabetes and you’re doing your best to reverse it, you should eat it. But one small serving of it, especially if you drizzle it with olive oil and have a lean, small portion of meat on the side, is relatively low on the insulin index. How can this be? Well, it takes longer than white bread and other starchy carbs for pasta to break down into sugar.

Index VS Load: conclusion

As always, the emphasis on eating should focus on foods rich in fiber (which also slows down the conversion of carbs into glucose), especially leafy green and cruciferous veggies (such as those in Certified Organic Green Drinks). And if you’re trying to normalize your blood sugar levels, your meals should satisfy you enough so that you can go several hours in between meals without feeling hungry. That means you need enough dietary fat and protein to balance out the carbs.

And this is a topic for another blog post about diabetes management, but in general, you can safely eat a moderate amount of fruit without worrying about it skyrocketing your blood sugar. Try to eat a handful of nuts along with the fruit. The protein and fat in the nuts will further slow down any potential for the fruit sugar converting to sugar in your blood.

But also keep in mind that if you eat a huge portion of meat, some of that protein can be converted into blood sugar. This is another limitation of the glycemic index. According to the index, meat ranks 0. That’s because meat doesn’t have any carbs.

Another reason the glycemic index isn’t a panacea for weight loss and diabetes management is two completely different foods can rank the same on the GI. But one of those foods can produce an insulin response that skyrockets your blood sugar level whereas the other food can have a much lesser insulin response.

How to Build the Perfect Mason Jar Salad

  1. The Dressing. Add about 2 tbsp or less
  2. The Veggies. Select ones that won’t absorb the dressing (i.e. onions, carrots, beans, snap peas, etc.)
  3. The Fruit (or more veggies). Another layer of your favorite fruit or veggie
  4. The Grains. Add 1/4 to 1/2 cup of cooked and cooled quinoa or rice
  5. The Greens. Add about a cup of your favorite leafy greens
  6. The Protein. Top it off with your choice of protein – nuts, cheese or meat

Layer all ingredients from bottom to top. Start with the dressing on the bottom. If using chicken or other meat, add it to the jar the morning you want to eat it.

Chef V’s Mexican Salad

  • 1 tbsp Chef V’s Spicy Cilantro Dressing (see below)
  • 1/4 cup black beans
  • 1/4 cup chopped mango
  • 1 tbsp chopped green onion
  • 1/4 cup cooked and cooled brown rice

Spicy Cilantro Dressing

  • 1/4 cup fresh lime juice
  • 1/2 small jalapeno
  • 1/2 cup olive oil
  • 1/2 cup fresh cilantro
  • 1/2 cup filtered water

Directions: blend ingredients together in a Vitamix or blender for 1-2 minutes until well blended.

It’s RAWGUST! Summer is the Best Time for Raw Food

Thinking about doing a cleanse? Going raw vegan in summer is easy and can help detoxify your body before, during and after the cleanse.

There’s a misconception about me….

Some people describe me as a vegan chef.

Maybe it’s because another Chef Veronica out there. But she’s a low fat vegan chef. Personally, as a certified nutritional therapist, I don’t think low fat diets are very healthy.

Or, maybe because my first job, at age 15, was working at a vegetarian restaurant.

But I’m not vegan nor 100% vegetarian. 

However, I do love and advocate the vegan diet.

Going raw and vegan in summer (or anytime of year, really) is like pouring fuel cleaner into your car.

Meat, especially non-organic meat, gunks up your transmission; it’s much harder on your digestive system. Consequently, when you eat lots of meat, it can slow down your liver’s natural detoxification abilities.

So you can use my recipes for giving your system a cleanse while feeling like your indulging.

Especially now because as I write this, it’s the heart of summer: the best time to do a cleanse.

One of the keys to successfully doing a cleanse—anytime of the year—is to not feel like you’re missing out.

Going Raw Vegan in Summer

And when you learn to make raw vegan recipes that taste just as good as their non-vegan cooked alternatives, you definitely won’t feel like you’re punishing yourself doing a cleanse.

Eating raw makes you feel lighter. Which helps if you’ve fallen off the wagon as of late, like I did during my three-week trip to Europe eating decadent meals.

Here’s another plus of going raw in summer: cutting down on electric bills. The last thing you want to do when it’s really hot outside is turning on the oven to 425 degrees to bake, say, a salmon fillet.

Sure, you might have air conditioning. But where I live, in San Diego, many people don’t have it. Especially those people who live near the coast. Even if you do have A/C, though, you’ll save money by not using your oven.

What is Raw Food?

Technically, raw food is prepared at a temperature that won’t destroy naturally-occurring compounds and enzymes. There’s some debate as to what that magic number is.

But most raw foodists consider 104 degrees (fahrenheit) to be the maximum cooking temperature.

Therefore, if you like broccoli but not when it’s completely raw, you can lightly cook it.

You can also buy a food dehydrator to make raw food snacks such as dried fruit. However, here’s where the raw food temperature debate comes into play.

Dehydrated raw food still qualifies as raw by some people even though the dehydration temperature is usually between 105 and 115.

And don’t get me started about raw almonds. That’s for a whole other blog topic.

(Raw almonds really aren’t raw; they are pasteurized.)

Don’t get caught up in the technicality of what is and isn’t raw food.

If it’s something that comes directly from the ground or a tree, and is, at worst, very minimally processed, then I consider it a raw food.

In other words, if it’s a fruit or vegetable or nut or seed, it’s raw. Or, if it’s a byproduct of any of these, cooked at an ultra low temperature, it’s also raw to me.

Going Raw Vegan in Summer: Isn’t Going Raw Enough?

Most raw food is very easy for your belly to digest, with maybe the exception of nightshade veggies like peppers, tomatoes and eggplant.

That’s why introducing plenty of raw vegan foods into your diet when you are cleansing is smart.

But isn’t going raw enough? Why also vegan? Can’t I eat raw cheese during a cleanse?

Great questions! Glad you asked 🙂

Yes, raw dairy is an option. But like raw almonds, raw dairy really isn’t raw, according to raw foodie purists.

The more important point is that dairy, even if it’s raw is not ideal for cleansing. In fact, I suggest you completely avoid dairy for at least 3-7 days before you start a cleanse.

Dairy gums up the works. If your liver is sluggish, eating cheese certainly isn’t going to help it release toxins faster.

Going Raw Vegan in Summer: Here’s What I’m Eating Now

Hardly anybody wants to eat hot soup in summer. Or drink scalding bone broth.

But a light yet satisfying cold soup is just what Mother Nature calls for this time of year.

That’s why I love gazpacho in summer.

And here’s one of my favorites: Raw Cucumber Cilantro Avocado Gazpacho. I know, sounds like a mouthful, right? Well, it’s got a huge taste.

For a main course, how about some pasta. Pasta … That’s not raw, is it? And it’s not vegan if it’s got ricotta in it.

But my Raw Pesto Lasagna with Macadamia Ricotta contains zoodles, not noodles. Check out the recipe to see how I make a raw vegan ricotta!

Finally, it’s time for dessert. I’m a sucker for cheesecake. But obviously, regular cheesecake is a no-no when you’re cleansing.

Yes, it’s possible to enjoy a decadent-tasting dessert while doing your own cleanse?

Now, I feel I have to clarify something important here. If you’re doing one of my 3, 5 or 7 day cleanses, you’re sticking to Organic Green Drinks, Vegan Protein Shakes and Detox Soups.

Raw Pesto Lasagna w/ Macadamia Ricotta

Raw pesto lasagna made with zucchini, meaty Portabella mushrooms, and a rich tasting macadamia “ricotta” make this raw lasagna a summer treat. Pine nuts, garlic and spicy arugula in the pesto add even more flavor and zest.  – Veronica

Prep Time: 1 HR

Serving Size: 2 People

Ingredients

  • 4 large zucchini, sliced thin, length-wise (the sub for noodles)
  • 2 large portabella mushrooms, sliced thin, the length-wise (sub for noodles)

‘Ricotta’ Cheese Ingredients:

  • 1 cup macadamia nuts- soaked for an hour
  • 1 lemon juiced
  • 1 tbsp. olive oil
  • 1 tsp. organic sea salt
  • 1 tbsp. fresh chopped rosemary

Pesto Ingredients:

  • 1 cup fresh organic basil
  • 1⁄2 cup raw pine nuts
  • 1 clove garlic
  • 2 tbsp. cold pressed olive oil
  • 2 tbsp. water
  • 1⁄2 cup organic arugula
  • 1 tsp. organic sea salt

Directions

Prepare the ricotta cheese by mixing all ingredients into Vitamix or food processor and process until smooth. Set aside in a bowl, scrapping the sides to get all the ‘cheese’.

Rinse Vitamix and blend all the pesto ingredients together, slowly adding the oil while blending. Set aside in a bowl, scrapping the sides of Vitamix to get all pesto. I

n a 3 x 8 baking dish, smear a small amount of pesto on the bottom. Layer 2-3 pieces of zucchini. Layer 1⁄2 the amount of ‘ricotta’ on top of the zucchini.

Layer 2-3 Portabella mushrooms on top of the ricotta. Layer 1⁄2 the amount of Pesto on top of the mushrooms. Repeat once more and end with pesto layer on top. Garnish with leftover pine nuts and shredded basil. Bon Appetit!

The Dangers Lurking In Natural Meat (Nitrite Free)

Let me get something out the way here: I’m not a militant vegan. I do eat a 95%-plus plant-based diet. But I would never ever tell anybody to give up meat altogether. I believe that’s a highly personal decision; it’s one that’s just as sacred as religious beliefs and convictions. 

But I recently learned something deeply troubling that’s making me think twice about eating even natural meat. 

First, take a look at this image of the package of Oscar Mayer’s “Natural” slow roasted turkey breast:

Sounds like good stuff advertised by the good folks at Oscar Mayer, right? 

Let’s see, “no added hormones.” We like that! 

“Give me added hormones in my food,” said nobody ever. 

No gluten. No artificial ingredients. No artificial flavors or colors or preservatives. 

Just how turkey slices should be, right? 

If we could just know that the turkeys lived the high life, with abundant, easy access to the outdoors, we can feel good about eating the occasional slice of turkey, am I right? Obviously, if you’re vegan, you strongly agree. And I get that. But I’m talking to those who do eat meat and think that eating “natural” or even “organic” meat is far superior than factory-farmed meat.

But after you finish reading this, I think you’re going to be eating even less meat. 

I’ll explain why in just a little bit.

The Cancer-Causing Chemicals in Meat

Processed meat contains nitrites. Nitrites are added to prevent food-borne pathogenic diseases like botulism. That sounds like a good thing. Botulism is food poisoning, which strikes roughly 1 in 6 Americans every year, hospitalizing over 125,000 people and killing 3,000. So from that perspective nitrites sound like a good thing to add to food. 

Nitrites are also added to processed meats as a preservative; it keeps the meat from going bad much sooner than it naturally would and also preserves the color. 

But there’s some really bad things about nitrites. And maybe you’re already familiar with the fact that nitrites in processed meats are carcinogenic. Sorry to burst your bacon-loving bubble, but yeah, that means bacon and sausage can cause cancer. So does lunch meats (deli slices), hot dogs, and even those fancy cured salamis that you see in the wine and cheese section of Whole Foods.

Does Natural Meat Have Nitrites?

Take a look again at the image above of the Oscar Mayer “natural” turkey breast label. There’s one more major selling point listed that has to do with nitrites. Can you spot it? 

In case you don’t have a magnifying glass or don’t know how to zoom in on a pic, I’ll spell it out for you: “No nitrites or nitrates added.” 

(Nitrates can chemically change into nitrites but don’t worry about that technicality for now.)

Under where it says no nitrites, it says, “Except those naturally occurring in celery juice and sea salt.” 

Because the nitrites come from celery juice it must be harmless, right? 

Well, when you drink freshly made celery juice, the nitrites in celery juice are harmless because they haven’t oxidized (turned rancid). 

However, when you cook meat, especially on the grill, the heat causes the nitrites to oxidize. 

Cutting to the chase, what this means is that food manufacturers are getting away with a big lie. In effect, naturally-occurring nitrites from celery juice and sea salt are the same as those that are naturally-occuring in meat. 

Eating turkey breast is probably less risky than eating bacon or grilled hot dogs. That’s because turkey breast takes longer to oxidize. However, don’t be fooled into thinking that the claim “no nitrites added” is keeping you safe from cancer-causing chemicals in meat.

Want Healthy Lungs? Avoid Nitrites!

In lab studies, the poor experimental rodents that were forcibly fed nitrites developed respiratory issues such as emphysema and COPD (chronic obstructive pulmonary disease). 

In essence, eating cured/processed meats may be just as bad for your lungs as smoking! In fact, nitrites are formed from the combustion of tobacco smoke. 

Could it be that the rising prevalence of asthma in kids is attributed to processed meat? I think it’s part of the reason for sure.

Don’t Believe the Nitrite-Free Hype

Unfortunately in this country, food manufacturers have an easy time getting away with false or misleading advertising. Leading consumer advocacy groups are trying their best to stop this deceptive practice of labeling “natural” meats as nitrite-free. It’s like the nutrition facts label of a box of cereal saying “no sugar added” with an asterisk that says “except for those naturally-occurring from cane sugar.”

I admit, for years I was fooled by this. Luckily for me, I hardly eat meat so I don’t need to worry about it. But hopefully after reading this, you are a better informed consumer.

What Do I Eat Today – A Fresh Vegan Menu

For Breakfast – Berry Parfait

My raw berry parfait is made with nuts. Here's a tip: many raw food recipes call for soaking nuts. Why? Soaking nuts (from 2 hours to overnight) improves  the flavor and  nutritional value of the nuts by releasing dust, residue and tannin into the water, leaving the nuts with a softer, buttery texture and increasing their digestibility. Never use the soak water – always discard it.

Are you about to take your first trip in a long time? Excited but still a little nervous? Then keep reading because I have some tips to make your travel experience a little more easy-going.

Or maybe you’re not nervous at all to travel because you’ve been vaccinated for COVID-19….

If that’s the case, you shouldn’t let your guard down even if you’ve been vaccinated. 

That’s because there are well over 200 viruses that are known to be able to infect humans. Obviously, COVID-19 is the one that’s still on everybody’s mind, but it’s clearly not the only one that can make you sick if you’re flying. 

So let’s dive in and explore how to keep your immune system strong and balanced before you trip.

Start Taking Care of Your Immune System Now

Suppose you’re meeting close friends for dinner before you trip. Your friends order a bottle of wine. Toasts are made to being fully vaccinated and returning to life, and to your upcoming trip.

One glass of wine quickly goes down. Then another. And another. And by the next day, you’re all congested and your energy is way low because you couldn’t sleep (the wine and the congestion interfered with your sleep cycle). 

At this point, your immune system has taken a huge punch to the gut. (No pun intended; 80% of your immune cells are in your gastrointestinal tract.) The congestion can then lead to a cold or sinus infection. 

If you’re sensitive to sugar and gluten like I am, all it takes is one celebratory meal to make yourself sick. 

Or suppose, you’re going to a birthday party shortly before your trip. Allow yourself one tiny square of birthday cake but no more. It’s not worth jeopardizing your immune system for what may very well be your first significant trip in over a year. 

In addition to limiting alcohol and added sugars, start supporting your immune system now by fueling your cells with nutrient-dense superfoods. If you don’t have time to prepare meals with green leafy veggies, you can drink them down and have it delivered to your home

Because of COVID, in addition to green, leafy veggies, I’ve been getting more edible mushrooms in my diet. Mushrooms are one of the best foods for immune support. Just like my Organic Green Drinks make it easy to get green leafies in your diet, mushroom powders make it easy to get ‘shrooms. 

Organic Hand Sanitizer

Are you still using hand sanitizer after every time you go out in public? I can’t say I blame you. However, I am concerned about the long-term health effects to the gut microbiome when using conventional hand sanitizer so often. 

This is especially true if you’re frequently disinfecting your hands with antibacterial soap. 

And when I travel, instead of antibacterial soap, I use organic hand sanitizer or an essential-oils based disinfectant like Thieves spray. 

Another thing you can do is carry some extra napkins on you when traveling. If you have to open a bathroom stall door, whip out the napkin and use it to grab the handle. I know it may sound wasteful, but, hey, as the saying goes, reduce, reuse, recycle. Don’t grab a huge wad of napkins next time you’re getting coffee to go. But if you already have napkins or tissues on hand, why not put them to good use for the rare times when you fly?

Take a good Probiotic

 Especially important before I travel, I make sure I eat probiotic-rich foods and take a high-quality probiotic supplement to colonize my gut with friendly bacteria. I recommend the brand probiotic I take it’s called Bio-k. They have dairy and non dairy fermented options. To me it’s the best source because it’s fresh not a pill. I have one bottle for three day’s servings, each day, on an empty stomach. Then I wait 15-30 minutes before having my Green Drink.

Nasal Spray

The bone-dry air of an airplane is the perfect breeding ground for viruses. Now, in fairness to many airlines like Southwest, they have done a great job installing high-tech air filters that, according to Southwest’s website, offers “a full exchange of cabin air with fresh, outdoor air and HEPA filtered air every 2-3 minutes.”

But even so, the dry air on an airplane can cause microscopic tears in your nostrils. This makes it more likely for any potentially-pathogenic virus to penetrate the mucosal barrier in your nose and infect you. The antidote to this is moisturizing your nose with a saline nasal spray or nasal lubricant gel or oil, as soon as you get on the plane. (Or better yet, apply it before you enter the airport.) 

Viruses Aren’t The Only Concern When Traveling

COVID-19 is the predominant health concern for those traveling. But don’t forget about traveler’s diarrhea, food poisoning and other digestive maladies that arise. 

As I mentioned in a previous post I wrote about traveling with kids, I always make sure to bring remedies that will soothe an upset tummy. Read it to find out why I like yeast probiotic and Oregon Grape Root the best as well as tea tree oil for other health mini-crises that may arise while traveling.

Stress Management

And perhaps the best advice I can give is to not give into fear. 

One excellent way to keep negative or fearful thoughts at bay is to maintain a daily health-manifestation practice. Repeat a simple mantra a few times a day that you’re healthy and your immune system is supporting you and well-balanced. 

You can recite the mantra mentally so the person on the plane next to you doesn’t think you’re kooky. 

And don’t forget to take long, deep breaths several times per day. If you’re currently not doing that now and your trip is coming up, start a breathing/meditation practice today, especially if you’re somebody who experiences a bit of anxiety before a big trip.

What’s Chef V Been Up To In 2022?

Like most people, Veronica Wheat Kress has embraced 2022.

The entrepreneur behind ChefV.com has been thrilled with life returning to a semblance of normalcy. For her, that has meant a return to in-person yoga classes, golf, running transformational health retreats for women and traveling.

The first quarter of the year witnessed Veronica making up for lost time. In February, she co-hosted a retreat in Santa Ynez, which is the gorgeous wine and ranch country not too far from coastal Santa Barbara. Veronica cooked every meal for her small group of lady guests, partook in deep-breathing kundalini yoga classes at 6 a.m., went horseback riding, and of course, indulged in a healthy, moderate amount of wine tasting. “We all had an amazing time connecting and sharing supportive stories. It was an awesome, empowering retreat,” Veronica recollects.

Based on the success of the Santa Ynez retreat, Veronica has been busily preparing for another women’s retreat this summer (June 24-27) in the exclusive Hamptons near NYC.

After a trip to Cabo San Lucas in March, Veronica and husband, Brandon, went to Hawaii in April. Because Brandon’s father grew up in Hawaii, luckily, the pair have connections there and have been going for the last 12 years as a couple. This time around was Veronica’s first experience in Maui, where she, as an avid golfer, was stoked to have played at Kapalua’s Plantation Course, one of the most majestic—and challenging—golf courses in the world. Veronica had an amazing time playing there despite the extremely challenging changes in elevation and blustery conditions.

Also on that trip, Veronica and Brandon did something called E-foiling. Picture a surfboard with a submerged boomerang operated by electric power and there you have E-foiling. It’s catching on in the surfing world but Veronica and Brandon tried it out for the first time in the placid water of Oahu’s Turtle Bay, where she says she also enjoyed her one daily indulgence: a Mai Tai.

On the business side of things in 2022, things are on the up and up. Veronica has expanded her operations on the East Coast. Her West Caldwell, NJ storefront increased in size, allowing her to take on more orders in the NYC metro area and beyond. She’s even contemplating expanding her San Diego-based warehouse.

And before the year is up, Veronica says she plans on starting her second cookbook, which she promises will be less restrictive than her recipes in Making Cleansing Easier.

Unfortunately, because of the economic climate and inflation, 2022 was the first time in 12 years of running ChefV.com that Veronica and Brandon saw no choice but to raise prices, albeit modestly.

The good news, says Veronica, is that the new prices will not affect legacy or current Green Drink subscribers. And Chef V’s Green Drink plan will remain highly affordable at approximately $7 per day for new customers.

“At farmer’s markets in the San Diego and NYC area, it’s pretty common for juices to cost $10 or even $12 a bottle and they’re not even certified organic like Chef V Green Drink,” says Veronica.

In a multi-billion juice market that’s completely over-saturated and dominated by corporate Goliaths like Odwalla, Naked Juice and Bolthouse Farms, you decide to enter the market with only a slingshot to tackle the giants being a recipe for a green veggie drink that a few dozen clients in the San Diego area are addicted to.

In an interview with CanvasRebel.com, a leading forum for small business entrepreneurs, the face of ChefV.com, Veronica Wheat Kress, talks about the giant leaps of faith she took to start and expand her business.

First, the challenge was to launch a business that was already insanely competitive. Before founding ChefV.com, Veronica was a private chef for clients in the San Diego area. Her ultra low-sugar recipe for Organic Green Drink with seven leafy greens quickly gained in popularity beyond her chef client list.

So why not launch a healthy Green Drink business? Veronica gives credit to the audacious idea to her supportive husband, Brandon, who would eventually help her run  ChefV.com as the CFO.

It’s not easy starting any business. But especially not one with a ton of competition. Juice bars were becoming as ubiquitous as coffee shops; independent and large-chain juice storefronts were seemingly sprouting on every corner.

So rather than squeeze into a crowded marketplace, Veronica, like any entrepreneur worth their salt, saw a unique opportunity.

Bring healthy juice to the people. By offering the convenience of raw, low-sugar, high nutrient-density green veggie juice home delivery, Veronica found a niche. With juice home delivery, customers no longer have to spend time shopping for produce. And no time wasted chopping up veggies and cleaning the blender.

Despite the innovative idea, Veronica realized that if you build it, it doesn’t necessarily mean they will come. In order to scale up a business that has both an online component and a brick-and-mortar storefront, Veronica and Brandon took the risk of spending a significant chunk of their savings on SEO and securing a high-end production facility that doubled as a juice bar to build a local, grass-roots following.

Veronica expanded her business from Green Drink only to include single- and multi-day cleanses as well as a 21 day detox program with vegan protein shakes and soups.

Once success was achieved in San Diego, the next risk was to replicate the achievement in other nearby high-urban-density areas such as Orange County and Los Angeles. Done and done. From there, in order to expand the client base and better serve customers located on the East Coast, Veronica and Brandon packed their bags for New York City.

Using nothing but instinct and sheer guts and determination, Veronica and Brandon found a commercial kitchen and secured an organic produce vendor before noon on the very first morning in NYC. They also found a tiny apartment and an even smaller kitchen, all 200 square-feet of it.

The move to the Big Apple greatly expanded ChefV.com’s customer base. But as a result of the growth, Veronica quickly outgrew her kitchen. So another risk was taken when she relocated her NYC commercial kitchen to a 800 square foot facility. But after 5 years, the walls started to close in once again; it was time once again to expand.

Having no clue where to relocate, and once again using instinct rather than being bogged down by statistical analysis, Veronica decided to move outside of NYC to a town in New Jersey she had never even heard of before, West Caldwell. “We couldn’t have picked a better location had we tried,” says Veronica of the move. The affluent area is within striking distance to NYC but because of having more room for a new facility, Veronica was able to launch a wildly successful storefront that features almost two dozen bowls, smoothies and juices, helping her garner a large following in the NYC metro area.

You’ve Heard About “Matcha Tea” Hundreds Of Times … So What Is It?

I believe in sharing with my followers every possible thing that can improve their health. This includes beverages other than my Organic Green Drink delivery plan. 

And hands down one of the healthiest drinks you should consume often besides Green Drink and water is matcha tea. 

Since I’m not a coffee drinker, I really enjoy drinking matcha green tea. Matcha does contain caffeine but roughly about a third of the amount as a regular cup of coffee. I have never felt jittery after drinking it. 

Are you somebody who has heard the term “matcha” but have no idea exactly what it is? Then this article is for you.

What Is Matcha Tea? 

Matcha tea is a shade-grown, whole-leaf tea powder. It’s made by taking tea leaves (from the camellia sinensis plant) and grinding the leaves into a fine powder. 

The highest-quality matcha tea, which is most often grown in Japan (the rarer white matcha tea powder is grown in Kenya), is made from leaves that have been shaded for up either two or three weeks before the first harvest of the season (which is usually in the winter). 

Then, the leaves are steamed, the veins and stems are removed and ultimately dried before being ground into a fine powder. So instead of drinking tea from a bag or loose leafs, matcha always comes in powder form. 

Nearly 5,000 years ago, China became the birthplace of tea. Buddhist monks introduced matcha to Japan approximately in the 1300s. Matcha tea mostly fizzled out in China but in Japan, the oldest type of tea in this tea-obsessed island nation, has remained popular. And over the last few years, matcha tea powder has become a huge health trend in the west.

Is Matcha Tea Powder Better Than Regular Tea?

The fact that matcha is cultivated in the shade is very important. That’s because when the tea leaves mature in the shade, the levels of the green pigment, chlorophyll, increases. I recently covered the topic of liquid chlorophyll drops and how it’s a huge trend on TikTok. 

To sum up: consuming chlorophyll-rich foods and drinks can increase the amount of red blood cells in your body. This in turn, increases your oxygen capacity which gives you more endurance and energy. Also, the young TikTokers swear by chlorophyll for skin health.

Another difference between regular green tea and matcha is that the latter is much more concentrated. This means that by drinking green tea in powder form, you’re getting a larger dose of the beneficial phytonutrients. 

Any type of herbal tea offers health benefits. But it seems that matcha is the gold-standard.

Benefits of Matcha Green Tea 

Matcha powder contains a wide variety of antioxidants and other nutrients. It’s also a great source of vitamin K, which is one of the best nutrients for your blood vessels and lungs. 

A study published in Nutrients supports drinking matcha tea powder for enhancing brain function. The phytonutrients in matcha “confer benefits upon cognitive functions of elderly people,” said the researchers, who led a 12-week trial involving 61 participants. Each of the matcha participants drank three grams of powder. 

There’s solid evidence that supports matcha for cardiovascular protection, blood sugar levels, blood pressure, inflammation, cholesterol  levels, anti-aging and pretty much every other health benefit. 

There’s a couple phytonutrients in matcha that a study in Food Research International says gives it the most benefits: l-theanine and epigallocatechin gallate (EGCG). 

L-theanine is a mood-boosting amino acid. It also helps you feel more calm because it activates the neurotransmitter called GABA. 

As for EGCG, there’s solid evidence that it can kill tumors. 

Conclusion

Keep in mind that just like everything else in life, quality matters. In Japan, matcha tea is used ceremoniously. Ceremonial-grade matcha is the highest quality. The green color is vivid, resembling a patch of Irish moss. Lower-quality matcha powder, but healthy nonetheless, is used for baking.

Don’t be so ‘Resistant’ to Eating These Carbs

I used to be a carb shamer.

I mean, other than trans fats, carbs are the worst thing for health, right? You don’t have to be a certified nutritional therapist like yours truly to understand that out of the 3 macronutrients, carbs have the highest impact on blood sugar and insulin. (Eating a lot of animal protein can also raise insulin.)

Carb-phobia is why I flirted with ultra low carb diets like keto. But after feeling awful switching to keto, you couldn’t pay me enough to swear off carbs again. Life’s too short to feel miserable.

The fact is that 99% of Americans can’t live without eating grains (which are carbs). Not because grains are necessary for survival, because they aren’t. You can go the rest of your life consuming carbs from only fruits and vegetables (which are technically carbs, too). But how realistic is it to eat grain-free for the rest of your life.

That’s why I’m excited to tell you about the healthiest carbs that aren’t fruits and veggies. They are called resistant carbs and I encourage you to get lots of them in your diet.

In fact, there’s one simple trick I’ll show you in just a bit that transforms one of the worst carbs for your health into a much healthier one.

What Are Resistant Starches? 

The reason why the most common grains and high-starch carbs are bad for you is that they quickly convert into glucose (sugar) in the small intestine. This drives blood sugar levels higher and causes a release in insulin. And it’s the reason why even though sushi is one of my favorite foods, I don’t get it that often. That’s because I feel like white rice gets digested too quickly. Then, after spending $100 on a sushi meal, I’m hungry a mere two hours later.

(Keep reading because the simple trick I teased above turns even white rice into a healthier carb choice!)

Unlike quick-burning carbs, resistant starches (examples below) don’t get digested in the small intestine. Instead, they pass into the large intestine where they ferment. This fermentation creates prebiotic fiber. (I just checked out my nutrition articles; can’t believe I haven’t written about prebiotic fiber. I’ll add that to my to-do list.)

Prebiotic fiber, also called “prebiotics,” have all the makings of a new health trend, and for good reason. Prebiotics are the food that fuels your healthy bacteria (probiotics) in your gut. You can swallow probiotics until you’re blue in the face and bloated in your gut.

But you can’t colonize your gut with healthy bacteria if the microscopic friendly bugs don’t have anything to feast on.

Besides, many probiotic supplements might be a waste of money. This is because the overwhelming majority of bacteria in the capsules die before reaching the large intestine. Having a healthy gut is vital for immunity, mood, digestion and basically all other functions.

Could it be that eating carbs is the answer for obtaining gut health? Maybe, but only if you’re eating resistant carbs.

More Reasons To Be Less Resistant About Eating Carbs

When you eat lots of prebiotic fiber, it makes you feel full. Feeling full of fiber prevents cravings for unhealthy carbs (basically, anything that contains white or wheat flour) that I will still shame you for eating. (Just kidding. Do what you like. I’m not really a shamer. I just help people get their daily dose of leafy green veggies in the easiest, most affordable and convenient way.)

If you need to improve your health metrics, you’ll be happy to know resistant starches also lowers cholesterol and is associated with a lower risk of developing colon cancer.

Best Resistant Starches

If you love bagels, cookies, muffins, bread and other baked goods, sorry, these aren’t on the list of best resistant starches. However, as I promised, in the next section, I’ll reveal a way to make a couple common carbs more resistant to digestion.

Do you remember this song from your childhood:

“Beans, beans, they’re good for your heart, the more you eat, the more you…”

You can fill in the blank yourself. The good news about beans and lentils (which are in the family of legumes) is that many varieties are high in resistant starch. Some people who have type 2 diabetes are concerned about the high amount of carbs in beans. But I think, considering the amount of fiber and resistant starch (a double dose of fiber, really), beans are perfectly healthy for those living with diabetes. Just make sure to closely monitor those A1C levels before and after meals.

The bigger concern with beans is that they contain anti-nutrients, which interfere with your body’s ability to digest and absorb minerals. A simple thing you can do to greatly reduce these anti-nutrients is soaking the legumes overnight in water.

More resistant carb sources:

  • Unripened bananas
  • Peas (especially shriveled ones; peas are also legumes)
  • Barley
  • Raw potato starch
  • Glucomannan flour
  • High-maize flour (corn)
  • Arrowroot starch
  • Corn starch (buy organic for the same reason as oats)

How To Make Starchy Carbs More Resistant To Digestion

So what’s a potato, pasta and rice lover to do? These staple carbs aren’t on the best resistant starches list….

But here’s how you can get them to be.

Simply cook them and let them cool overnight in the fridge. Then you can simply reheat them. And voila, you’ve got what otherwise would be a blood-sugar-spiking carb transformed into one that is actually good for your gut! The same goes for sweet potatoes and corn tortillas!

Cooling simple starches like white rice overnight changes the molecular structure of the carbohydrate chains. Science magic!

Of course, as the diet professional I am, I should leave you with a warning to moderate your portion sizes. But that’s how life should be lived, enjoying your favorite foods without overdoing it.

Sweet Watermelon Crunch Salad

Chef V’s tip: To blanch the broccoli, bring a pot of water to a boil, drop the broccoli in for 1 minute, and then remove and cool with ice water. This will make it slightly softer without losing much of the nutritional value.

Ingredients

  • 2 cups arugula
  • 3 cups chopped watermelon, seeded
  • 2 ripe Bartlett pears, peeled and thinly sliced
  • 3 cups chopped broccoli florets, blanched and cooled
  • 2 tablespoons raw pine nuts
ZESTY DRESSING
  • 1/4 cup cold-pressed olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon or dry mustard
  • 1/2 teaspoon lemon zest

Directions

Plate the greens with watermelon, pears, broccoli florets, and a sprinkling of pine nuts.

Combine the dressing ingredients. Drizzle over the salad and serve.

Want to Live Longer & Avoid Cancer? Don’t Take Supplements (Do This Instead).

Do you spend a couple minutes every morning popping pills? I’m not talking about dangerous, addictive ones. I’m talking about supplements. Lots of people take health supplements in the hopes of living longer and avoiding chronic disease like cancer.

But according to an article on the Consumer Reports website, if you’re popping supplements like candy, you might not only be wasting your money … you may actually also be harming your health.

The Consumer Reports article requires a subscription (a great website). So for your benefit, I’ll give you the brief skinny on what Consumer Reports found out about why supplements just might be not what the doctor ordered for living a long, healthy life…..

The Verdict Is In: Whole Food Is Better Than Supplements

Nothing shocking about this headline, right? You don’t need to be a scientist or certified nutritional therapist (like me) to know that eating whole foods is better for living a long, healthy life than relying on supplements.

Nonetheless, that’s the conclusion of the Consumer Reports article. What is shocking, however, from the study, involving 27,000 people is this: 90 percent of people don’t eat the daily recommended 1½ to 2 cups of fruit and 2 to 3 cups of vegetables, according to the Centers for Disease Control and Prevention.

Seriously? 90 percent? That’s absurdly high.

Good thing I created an Organic Green Drink that makes it ridiculously easy to get your daily dose of veggies and then some.

So if 90% of the 27,000 people in the survey weren’t getting the recommended servings of fruits and veggies, could supplements be the answer for making up for the nutrient shortfall?

Nope. Not according to a source from the Center for Responsible Nutrition (CRN).

The source says dietary supplements shouldn’t be a substitute for healthy food. That’s because something you eat (or drink, like the 7 certified organic green veggies in Green Drink), might not just contain a certain vitamin. It’s also going to have a variety of other plant chemicals. These chemicals synergistically react with the other compounds. And scientists don’t yet fully understand how these compounds work. Isolated nutrients from capsules and pills simply don’t have the same effect.

Say No To (Most) Isolated Nutrients 

Here’s another reason to not rely on supplements to keep you healthy: isolated nutrients like vitamin C pills aren’t regulated by the Food and Drug Administration (FDA). Companies can therefore get away with having heavy metals in protein powder.

Some supplements may contain far less of the isolated nutrient that what the package says.

If you can afford it, get a subscription to Consumer Reports or ConsumerLab.com. These two organizations are independent and test for purity and accuracy in supplements.

And if that’s not enough reason to ditch popping isolated nutrient supplements, let me give you a more compelling one.

Taking certain supplements may give you cancer. It’s true. It has been reported that if you take 1,000 mg per day of calcium in pill form, you might have a substantially increased risk of cancer. But when you eat foods rich in calcium your cancer risk doesn’t increase. Speaking of which, just one cup of kale supplies you with 100 mg of calcium. There’s 2 different types of kale in my Organic Green Drink.

Are Supplements Necessary?

Sometimes they are. Especially if you’re trying to get pregnant or are already with child. Folic acid and vitamin D are critical for fetal development.

Vitamin D is also good if you’re stuck inside all day and can’t expose some of your skin to sunlight for at least 10 minutes.

And if you’re vegan, you might want to take a vitamin B12 supplement as well as algal oil, a vegan-friendly substitute for fish oil.

Speaking of fish oil, if you’re eating wild salmon a couple times a week along with plant sources of omega-3 fatty acids (walnuts) you really don’t a fish oil supplement.

Now, I’m not suggesting supplements don’t have their place. I believe certain supplements, especially ones that are time-tested such as traditional Chinese medicine formulas or Ayurvedic herbs can balance your system and make you healthier.

But eating whole, real food is always better than relying on popping pills for optimal health. Of course, you really didn’t need me to tell you that, did you? (Sometimes, though, the best health advice is hearing something you already know; the repeated message helps reinforce it until finally it sticks.

And I hope that if you’re not getting your daily dose of veggies, especially the healthiest kind–green, leafy ones–you’ll give my Organic Green Drink a try.

I’m bringing sexy back … by flossing. 

I know, I know, flossing is like the least sexiest thing in the world. And when you’re dead tired and can’t wait to get in bed, it’s the last thing you feel like doing. 

But no matter how tired you are and how much you may detest the disgusting sight of food particles dislodging from your mouth, becoming airborne and sticking to your mirror, I want you to become a fanatic flosser. 

So what does flossing have to do with sexy? 

Flossing prevents systemic inflammation build-up in your body. 

In a nutshell, if you don’t floss, harmful bacteria in the gums can migrate to distant organs including the brain and heart. 

Again, what does this have to do with sexy? 

Well, your ability to lose unwanted body fat depends largely on your body’s overall response to inflammation. 

If you have elevated levels of inflammation, it’s going to be harder to lose weight. It’s that simple.

Flossing For Weight Loss

When you hear the word “infection” what comes to mind for you? Most people associate symptoms like fever, burning, itching, etc. But sometimes infections are imperceptible. And if you don’t floss, your gums will become inflamed. This is called gingivitis. Gingivitis is caused by a bacterial infection. And this bacterial infection is caused by not being a diligent flosser. 

So, let me be a lecturing momma to you: floss not just every day before bed but after every single meal. If flossing three times a day sounds too demanding, do what I do: do intermittent fasting, skip breakfast and have an Organic Green Drink. Then, just eat one or two large meals the rest of the day and try not to snack. If one meal a day isn’t enough, try having another Green Drink in the afternoon or a protein smoothie with non-dairy milk.

Flossing For Blood Sugar Management

I admit the real reason I floss religiously is not for weight loss but to prevent bad breath. I bet you dollars to gluten-free vegan donuts that if you come across anybody with kickin’ breath, they’re not a fantastic flosser. 

But if you are struggling with weight management, be honest and ask yourself, “Have I been flossing as much as I should be?” Skipping a night of flossing here or there may not seem like a big deal. But think for a second of the bacteria that can build up in your mouth if you let food stay trapped in between your teeth. It’s so gross to think that the natural bacteria in your mouth feed off the sugars from the food and drinks you consume. Yuck!

Personally, I don’t take any chances with bacteria buildup in my mouth. That’s why I floss after every meal (OK, I’m only human so like 98% of the time.)

If you don’t floss enough, the infection caused by the sugar-loving bacteria can elevate your insulin levels and increase body fat storage.

Brush Your Teeth After Every Meal To Stay Sexy

Don’t forget to brush your teeth after every meal as well. Many people brush their teeth first thing in the morning. But to me that doesn’t make much sense to brush if you don’t eat anything in the morning. What I do instead is use a natural mouthwash to freshen my breath and eliminate any potentially harmful bacteria. Then, after my first meal of the day (usually around brunch or lunch time), I’ll brush. 

If you don’t brush after every meal, tartar can accumulate along your gum line. And it’s along the gum line that an overgrowth of bacteria can cause gingivitis. And if you don’t do anything to nip it in the bud, not being able to lose weight easily won’t be your only health concern. 

That’s because gingivitis can progress to periodontitis. That’s when little pockets develop between the teeth and gums. At this point, the harmful bacteria go on the warpath, attacking the cardiovascular system. (Which is why it’s important to get way more vitamin C in the diet than the daily recommended 65 mg.)

Massage Your Gums In The Shower

One of the best things you can do for your gums other than flossing is using a waterpik, which jets a high-pressure stream of water in between your teeth and gums, dislodging any stubborn food particles and plaque buildup. If you don’t have a waterpik, a simple thing you can do is when you take a shower, put the shower head on the massage setting and open up your lips to expose your pretty pearly whites and gums. 

Obviously, there’s much more to successful weight loss than flossing. But many people don’t realize the connection between flossing and inflammation prevention. Adding flossing to your daily health routine may help you prevent unexplained weight gain.

Serving Size: 2 Person

Ingredients

    • 2 tbsp. organic coconut oil
    • 1 large yellow onion, chopped
    • 3 shallots, chopped
    • 2 garlic cloves, minced
    • 1 quart of organic vegetable broth
    • 6 cups organic broccoli florets, chopped
    • 1 tbsp. fresh thyme leaves
    • ½ cup raw, unsalted cashews
    • 1 cup coconut milk
    • ½ cup pepitas for garnish (optional)

Directions

In a large soup pot over medium-high heat, heat the coconut oil. Add onions, shallots, and garlic and cook until translucent, about 3-4 minutes. Add broth & broccoli and boil for 10 minutes. Remove the soup and pour into a blender. Add thyme, coconut milk, and cashews to blender. Blend until smooth, 2-3 minutes. Serve in a bowl and top with pepitas or garnish with extra thyme sprigs.

  • 1 cup organic basil, washed
  • 1 box of brown rice or quinoa spaghetti

Directions

Combine raw ground turkey and chicken sausage in a bowl and mix well. Mix in 4 oz. of crushed tomato sauce, bread crumbs, oregano, garlic powder, salt and pepper. Start forming meatballs by grabbing a handful of meat mix and forming a ball shape. Make all the balls, to desired size. You can make all big, all small or small and big ones. Just know that bigger ones will take a longer cooking time in the oven.

Preheat the oven to 350 degrees. Heat a skillet on the stove with 1 tbsp. of olive oil to medium-high heat. Add 2-3 meatballs at a time, depending on how many will fit, and brown the outside of the meatballs for about 5 minutes total, turning and browning the entire outside of the ball. Once browned, move to a foil lined baking sheet and bake all the meatballs for 10-15 minutes for small meatballs and 15-20 minutes for larger meatballs. When removing, cut one ball open to check doneness. The inside should not have any pink and should be firm.

Cook pasta according to directions on the package. While cooking the pasta, heat 1 tbsp. oil in a pan on medium-high. Add onion and cook for 2 minutes, stirring frequently. Add minced garlic and stir. Add 16 oz. crushed tomatoes and continue to stir until hot. Add chopped basil before serving. Spoon spaghetti onto plates, top with red sauce and a meatball or two. Top with additional sauce and serve with Love!

Got it? OK. Now, take a look at “added sugars” in the Nutrition Facts. Last year, the FDA required that all food manufacturing companies with sales of over $10 million list “added sugars” in the Nutrition Facts label. Smaller companies had to start complying with the new rule at the beginning of this year.

To make healthier choices for yourself (and your family) I want you to really start paying attention to added sugars on the nutrition facts label. One of the reasons why the FDA wanted “added sugars” added to Nutrition Facts is because there are dozens of nicknames for sugar. Unless an ingredient says “cane sugar” it can be very easy for consumers to overlook added sugars. Dextrose, maltodextrin, molasses, dextrin, agave, evaporated cane juice … These are just a few of the 56 secret sugars food manufacturers use to artificially sweeten food.

As a certified nutritional therapist, I’m glad that added sugars is finally on nutrition labels; it’s long overdue considering the pervasiveness of obesity and diabetes. But there’s a misleading problem with added sugars. Next to the amount of grams of added sugars is listed the percentage of daily value of added sugars.

And while that may seem like a good thing to know, I consider this very misleading. That’s because if you’re trying to manage weight, blood sugar and inflammation, the percentage of added sugars you should have is ZERO!!!

If you’re eating real food then you’re consuming no added sugars. I understand that we’re only human. So if you want to sweeten your coffee or tea with a packet of low-glycemic coconut sugar, which is an added sugar, I can live with that. But when it comes to buying peanut butter, salad dressing, condiments, bread and the dozens of other foods and drinks that you purchase from the supermarket, make sure that the added sugars are as close to zero as possible. Because if you watch out for added sugars, your sugar intake is going to decrease and you'll be healthier.

Winning by Eliminating Added Sugars

I’m sure I’ve written about high fructose corn syrup (HFCS) before so excuse me if I’m repeating myself. But it’s totally worth hammering in your brain how dangerous artificial sweeteners like HFCS are. In a nutshell, what HFCS and synthetic sugars like aspartame and sucralose do is block your brain’s ability to get the message from your stomach that you’ve had enough to eat.

Also, eating lots of fructose causes the proliferation of compounds in the body known as advanced glycation end products. These products have a very appropriate acronym: AGE. AGE-products accelerate the ageing process in the body.

It used to be that only alcoholics developed fatty liver disease. But now, because of the pervasiveness of fructose in the food supply, the rates of fatty liver disease in non-alcoholics is soaring.

It’s important to mention that I’m not talking about fructose from whole fruit. I’m talking about the cheap, synthetic artificial sweetener.

To me, it’s a little insane that the American Heart Association recommends a daily limit of 6 teaspoons a day of added sugars for women and 9 teaspoons for men. Considering that high sugar intake leads to heart disease, you would think that the AHA would simply advise keeping added sugar intake to as close to zero as possible. You can feel better every day, just by watching out for those sneaky added sugars.

How Much Sugar Should I Have?

Hopefully, the next time the FDA revises the Nutrition Facts label, it will make it easy for consumers to know the maximum amount of sugar—keyword: natural sugars—they should eat in one day. Let’s do away with percentages because ain’t nobody got time to do the math when we’re in a rush.

So, FDA commissioner, in case you’re reading this, let’s prominently place the number of maximum grams of sugar per day that should be consumed.

And that amount is…

Well, in the past, the World Health Organization used to say that no more than 10% of your daily calories should come from sugar. Then the WHO realized that that recommendation was ridiculous, so they lowered it down to 5%.

The average American consumes roughly 80 grams of sugar a day. Keep in mind that’s average. There are certainly many Americans eating twice that amount. I realize that everybody is different biochemically and some people exercise more than others. But if you had to put a number on it, what is the max amount of sugar you should have?

For most healthy people, I would recommend 40 grams of sugar from whole food sources such as fruits and vegetables. And you will thrive.

Daily Sugar Intake For People With Diabetes

If you have type 2 diabetes, you should probably limit your intake of total sugars to 20 grams per day.

Also crazy if you ask me is that according to the Centers for Disease Control and Prevention, people with diabetes should aim to get about half of their calories from carbs. That means if you eat 2,000 calories a day, 1,000 can come from carbs? What does the CDC think carbs convert into … magical unicorn fairy dust? Carbs convert into sugar. How can consuming half of your calories from carbs be considered smart blood sugar management? (It’s a rhetorical question; it’s not smart.)

In order to manage your diabetes, or even send it into remission, I recommend really upping your intake of natural, healthy fats like avocado, nuts, seeds, salmon, organic dairy, olives, olive oil, etc…

If you have type 2 diabetes, ignore the recommendation to eat a low-fat diet. Eating fat helps stabilize blood sugars and keeps you full, and prevents cravings for empty-calorie, blood-sugar spiking foods. “Fat” foods are not your friends, they are your metabolic friends!

The Leading Source Of Added Sugars

Beverages are the biggest offenders, accounting for nearly half of all added sugars. Obviously, soda is a big culprit. But what many people still don’t realize is how much sugar is contained in so-called “healthy juices.” You can drink healthier by checking the labels and making educated choices.

The big brand-name label juice companies that have been gobbled up by giant food conglomerates add a huge amount of sugar to their juices. And some of these juices at first glance appear healthy. They look green, loaded with green leafy vegetables. But if you take a look at the amount of sugar in the bottle, you’ll be floored.

I’m not one to name names, so I won’t throw the competition under the bus—even though they kind of deserve it because they are misleading people into thinking they are buying a healthy product when in fact it’s harming it.

Beyond Sustainable: How Regenerative Agriculture Will Heal The Planet

If you’re really worried about climate change, first of all take a deep breath and know that everything is going to be ok. But in order to curb greenhouse gas emissions, we need food-growing solutions that are beyond sustainable.

I’m sharing what I’ve learned about regenerative ag with you because I’m concerned about making sure that my Green Drink company supports healthy agriculture. And I want you to know about it as well.

Chef V’s Commitment to Healing the Planet

Next time you eat a salad or enjoy a Green Drink, I really want you to reflect for a moment on where your food came from and how it was grown. And the best way to do that is to think about your gut. 

You see, if you have a healthy gut, that means your large intestine is populated with lots of friendly bacteria from a wide variety of strains. 

It’s the same thing with soil. In order to provide you with abundant nutrients, the veggies you eat have to be grown in healthy soil. Unfortunately, the majority of the soil where our broccoli, sweet potatoes and other veggies is grown is mineral-deficient. The same goes for dairy and meat. Personally, I hardly ever have regular dairy or meat, but if I did, I would only consume it where cows are grazing on grasses grown with beyond-sustainable farming techniques such as regenerative agriculture, which I’m about to explain in just a little bit. 

But most of the dairy and meat comes from cows that are trapped in industrial feedlots. Or, if the cows are given access to fresh air, they graze on mineral-deficient grass. Grass contains beneficial nutrients such as Omega-3 essential fatty acids. So when you’re consuming conventional dairy or meat, you’re hardly getting any of those beneficial nutrients and you’re taking a gamble on your health with inflammatory issues.

It’s no wonder that more and more people are having digestive issues and health problems. If we’re eating food, even if it’s something healthy like kale, that has been grown in poor soil, we’re eating mostly dead food. 

And it’s not just our health that suffers when we eat food grown in poor soil. The health of our planet suffers as well. But if every farm on this planet switched to regenerative farming techniques, we could feed our gut with food that’s rich in vitamins and minerals and all those other amazing phytochemicals that aren’t listed on food labels. This would not only make us healthier, it would make our planet healthier.

What is Regenerative Agriculture?

How does having healthier soil improve the ecological health of the planet? Well, regenerative ag may actually help reverse climate change by acting as a carbon sink. This means that this beyond-sustainable farming technique can remove excess carbon that otherwise would get released into the atmosphere. If we’re able to remove CO2 (carbon dioxide) from the atmosphere, the theory goes, the planet will not warm to the accelerated levels it has been.

So what is regenerative ag? According to California State University at Chico, it’s using farming methods and ranch management techniques that restore degraded soils. “By rebuilding soil organic matter and soil biodiversity we significantly increase the amount of carbon that can be drawn down from the atmosphere while greatly improving soil fertility and the water cycle,” CSU-Chico explains. 

This is not meant as an insult, but many people are so out of touch with how food is made. Before I started Chef V, I was one of them. I had no clue about modern food cultivation practices like tillage. 

Tillage basically uses equipment to dig deep down into the soil—up to 10 inches—

before crops are planted. This allows for farmers to effortlessly plant more seeds. Tillage is sometimes necessary to plant new crops in a new season, but the practice is too pervasive and kills fertile soil. 

In fact, Regeneration International predicts that within 150 years, there will be no fertile soil left unless farmers adopt regenerative ag practices.

How Does Regenerative Farming Work?

The 7 certified organically-grown veggies in Organic Green Drink are farmed the old-fashioned way without large-scale industrial farming methods that strip nutrients away from the soil. 

Thankfully, modern farming equipment makes it easy for people who grow food to use no-till regenerative agriculture methods. This is essentially how food was grown starting about 12,000 years ago. Besides no-till, regenerative ag methods include crop rotation, composting, and fertilizing with animal manure instead of toxic pesticides. 

What is Monoculture Farming?

Take a look at the produce in a conventional supermarket. There’s a good chance that most of the veggies on display were cultivated using monoculture farming techniques. As the name implies, a monoculture farm only grows one crop like soybeans. Is this a bad thing? Mostly, yes. 

And the reason why comes back to your gut bacteria via the bacteria in the soil. You see, when only one type of plant is grown in a field, the ecological diversity of the soil becomes unbalanced. When you add tillage farming to monoculture farming, you get a recipe for dead soil. 

How Popular is Regenerative Farming?

Even though it’s really the original way people grew food, it’s only now making a comeback. The number of farms that are using beyond sustainable growing techniques like regenerative ag are still a drop in the bucket in comparison to conventional and factory farm operations. 

But the good news is that corporate food is beginning to wake up. The giant food conglomerate, General Mills, for instance, announced that by 2030, it will use regenerative agriculture on 1 million acres of farmland.

Healing The Planet With Regenerative Ag

Now I don’t want to bore you with more technical details about regenerative ag. I just wanted to introduce the concept to you, so that when you purchase food you can make the most informed decisions to best support your health. 

The lesson here is that conventional farming practices need to go back to their roots. And from what I’ve read, the good news for farmers is that regenerative ag is more economically viable. The bottom line is that if we want to decelerate global warming, not even sustainable farming will cut it. We need beyond-sustainable farming, where carbon is sequestered in the soil and won’t escape into the atmosphere. 

What’s needed on a massive scale is the restoration of Earth’s soil to capture all those greenhouse gasses that are heating up the planet. And the way we get there is by growing food through regenerative agriculture.

So Many Types of CBD! What’s The Best Kind To Use?

CBD, which comes from cannabis but doesn’t get you high, is supposed to ease tension. But with so many different products and kinds, choosing which CBD to take can induce a headache. Chef V breaks it down for you…

Are you CBD-curious but totally confused by all the different types of products with it? And are you totally confused by the different kinds of CBD to take? 

I don’t blame you. A few years ago, I was totally intrigued by CBD. Being a certified nutritional therapist and passionate devotee of all-natural healing, I was determined to learn more about it. 

After talking to some people I know who tried it and claimed CBD helped ease anxiety, I tried it myself. But back then, CBD was in just about everything, from shampoo to toothpaste. The CBD bandwagon was out of hand and the green gold rush was on. 

The problem was that the therapeutic effects of CBD are only felt if the CBD is of good quality. But there have been lots of shady business practices in the CBD business over the years. The general rule of thumb is that if you see a product with CBD sold at a gas station for cheap, don’t expect miracles. Like most things in life, you get what you pay for. That doesn’t mean the more expensive a CBD product is, the better it is. But you get the idea…

There are still plenty of substandard CBD products out there. CBD is unregulated by the Food and Drug Administration, so anybody can claim that a certain product contains X amount of CBD and you can be left holding the bag. 

But in this article, I’ll tell you:

  • What type of hemp extract is considered therapeutically the best (CBD comes from the hemp plant)
  • What’s the best product for specific health concerns
  • And what to look for in a reputable brand

Before we dive in, however, let me give you a mini crash course on CBD just in case you’re still not 100% sure what it is.

What is CBD? 

It stands for cannabidiol. CBD is an extracted molecule from the hemp plant. Hemp belongs to the cannabis family of plants. Marijuana is also a plant from the cannabis family. CBD is in marijuana but it doesn’t get you high. In fact, CBD counteracts the psychoactive properties of THC, which is the most abundant chemical in marijuana. 

CBD is actually the second-most abundant molecule in marijuana, and is just one of over 100 molecules that have been discovered in cannabis. These 100 or so molecules (I think it’s 134 that have been identified to date) are known as cannabinoids. 

Cannabinoids are phyto- (plant) chemicals that helps stimulate a system in your body that’s responsible for keeping you healthy and balanced. That system is known as the endocannabinoid system. 

When you get hurt, your endocannabinoid system springs into action to help relieve the pain. The problem is the effects of each receptor in this system is very short lived. That’s why some people believe CBD is helpful in keeping the endocannabinoid system going strong. This is especially true if you have anxiety or lots of stress. 

In 2018, industrial hemp became legal under federal law as an agricultural commodity. That means hemp pants might be back in style soon, for the first time in like 300 years. CBD comes from industrial hemp and contains a tiny amount of THC. But it’s such a small amount you won’t feel it.

Different Types of CBD

When it comes to the different types of CBD, here are three terms you’ll hear a lot:

  • Broad spectrum
  • Full spectrum
  • Isolate

If you’re going to start using CBD on a regular basis, it’s best to know the difference. CBD isolate contains no THC. If you’re one of those rare people who get a contact high from pot from someone smoking 500 yards away, then maybe CBD isolate is right for you. Remember, CBD has trace amounts of THC. So if you work for the CIA and don’t want to risk being nailed on a drug test for THC, you may want to start with CBD isolate. 

But for most people, I recommend not using CBD isolate. Broad spectrum also contains no THC. But it does contain other cannabinoids like CBN. In hemp extracts, CBD is by far the most abundant cannabinoid.

However, the trace amounts of other cannabinoids has a synergistic energy that works with CBD. This is called the “entourage effect.” People who swear by CBD believe that these lesser cannabinoids are vital for helping ease anxiety, pain and whatever else is ailing them. 

If you want the full entourage effect, choose full-spectrum CBD. It’s got all the cannabinoids of broad spectrum, plus the trace amount of THC. Just to emphasize again: it won’t get you high, and it’s not the same as medical marijuana. 

So to sum up, the best type of hemp extract in my opinion is full-spectrum CBD. I’ve tried CBD isolate before and it didn’t really do anything. But I’m sure for other people, CBD isolate or broad spectrum has some effect. 

Now that we have our type of CBD chosen, let’s go shopping for some product…

Until I have my own line of CBD—no plans as of yet—I’m not in the business of name-dropping brands. But at the end of this article, I’ll give you some pointers on what to look for when choosing a reputable brand.

Best for Sleep

When it comes to CBD products, gummies are all the rage. And why not. It’s therapeutic candy. What could be more fun? 

But there are a couple things I don’t love about gummies. Most of us consume far too much sugar and most gummies have sugar added to them. Plus, many brands have artificial food coloring. Numerous health problems have been associated with fake dye, especially attention-deficit disorder in kids. 

However, if I had occasional sleeplessness and had success using CBD gummies before bedtime, I’d keep at it. Just remember to brush those teeth before bed and cut down on the rest of your added sugars.

Best for anxiety & stress-relief

When it comes to easing nervous tension and anxiousness, I’m a believer in using the purest form of CBD possible: oil. Also called “drops”, CBD oil is pure hemp extract with nothing added to it other than MCT oil so it can be better absorbed. 

The best way to use full-spectrum CBD oil is to squeeze some drops of it under the tongue and hold it for about a minute before swallowing. This will help with the absorption. 

Warning: the purest of the pure CBD oil tastes super earthy and hempy. You can tell if it’s good quality stuff if it smells like weed a little bit. 

Best for soothing achy muscles and joints

I think daily use of high-quality CBD oil is the best for general wellness and mental well-being. But when it comes to taking care of your bod, let’s get topical. In the last couple of years, CBD roll-on bottles have become trendy and I think that’s fantastic. Who thought it would have taken so long for someone to come up with a purpose for roll-on bottles other than masking stinky pits? 

There are other forms of topical CBD like creams, lotions, salves, balms, etc. But you have to look at the ingredients to determine if it’s a good product. 

In addition to premium hemp extract, there should be many other healing botanical helpers like capsaicin, menthol and essential oils to name a few. But don’t expect your pain will miraculously vanish. Topical CBD may work for alleviating or masking pain but it’s not a magic potion. 

And what about trendy bath bombs, you may be wondering? Go ahead and try it. Get your luxury bath treatment on. If it’s a good quality bath bomb, you might just feel blissed out.

Tips for choosing great CBD

Any reputable brand will get their products tested by a third party and prominently display those tests on their website. Each batch of hemp extract should be tested for heavy metals, pesticides and fungus. And each lab report should show the molecular profile. That means the report will give you the percentage breakdown of all the cannabinoids like THC in the batch. 

By law, CBD can’t have more than 0.3% THC. And when CBD comes from hemp, it won’t contain more than that. CBD from marijuana is not federally legalized.

So now that you know what to look for in a great CBD product, get shopping. Read customer reviews, talk to your friends and experiment. That’s the fun of CBD, and remember, experimenting with CBD won’t get you high.

Making your own homemade oat milk is SO easy! All you need is a blender (I prefer Vitamix), a nut milk bag or cheesecloth, raw oats, and filtered water. I soak the oats for 30 minutes to remove the dust or any mold from shipping and handling, which also improves the nutritional value. Then drain the oats and use fresh filtered water to blend. Cheese cloth is great because you get so much in one package, it’s so versatile, and you can use it on a million things (making nut cheese, poaching fish, nut milks, straining seeds from fruit, and lots more.) However, I bought a nut milk bag and it is so much faster and easier to use the nut milk bag.

I use oat milk in so many things. I cook with it any time a recipe calls for milk and no one can ever tell the difference. I also use it in my smoothies to make them creamy. You can add it to coffee or tea, cereal, or just have a refreshing glass with ice.

The milk will stay fresh about 3-5 days in the refrigerator. I keep them in mason jars, since each jar is about 2 cups and this recipe makes 4 cups. I use two jars so the milk stays fresher for use later in the week.

Once you try homemade oat milk it will be almost impossible to drink store-bought milk again, which is pumped with artificial crap to keep it fresh on the shelves. The sad part is that a typical consumer would have no idea about what is inside of store bought oat milk or that it’s actually bad for you. The toxic ingredients found in oat milk stress your immune system and weaken your health. The ingredients in commercial oat milk may include added sugars, high sodium, inflammatory oils, carrageenan and xanthan gum. But the worst thing about store-purchased oat milk is it usually doesn’t even contain much oats!

In light of this, I suggest making your own nutritious and delicious oat milk. And the great part is, it’s really easy!

INGREDIENTS

  • 1 cup raw oats
  • 2 cups water, for soaking
  • 4 cups cold filtered water, for blending
  • High power blender (I prefer Vitamix)
  • Nut Milk Bag or Cheesecloth

INSTRUCTIONS

Soak the oats in 2 cups of water for 30 minutes. Drain the nuts and rinse. Blend 1 cup of oats and 4 cups of cold water on high for 2 minutes. Pour the oat mixture into the cheesecloth or nut milk bag. Squeeze out excess milk. Pour into mason jars or a milk jug. Save the leftover oat meal for future recipes.

You can do this by heating the oat meal at 170 degrees Fahrenheit for 2 hours. Make sure to mix the oat meal frequently while baking to dehydrate the water from making the milk. Use Chef V’s Oat Milk right away or store in an air tight container for 3-5 days.

You can add some oat milk to your Green Drink to make it a little creamy. Yum!

Do you Take Vitamin K? Maybe You Should.

You know that Vitamin K is important for heart and circulatory system health, but now a connection with viral disease and mortality makes getting your Vitamin K more important than ever. 

In recent reporting on viral research, The Guardian reports: “Researchers studying patients who were admitted to the Canisius Wilhelmina hospital in the Dutch city of Nijmegen have extolled the benefits of vitamin K after discovering a link between deficiency and the worst pandemic outcomes.”

Dr Rob Janssen, a scientist working on the project says: ““My advice would be to take those vitamin K supplements. Even if it does not help against severe viral disease, it is good for your blood vessels, bones and probably also for the lungs.”

The research, undertaken in partnership with the Cardiovascular Research Institute Maastricht, one of Europe’s largest heart and vascular research institutes, studied 134 patients hospitalized for viral disease between 12 March and 11 April, alongside a control group of 184 age-matched patients who did not have the disease.

Jona Walk, a second researcher on the study, which was submitted for peer review on Friday, said: “We want to take very sick patients and randomise so that they get a placebo or vitamin K, which is very safe to use in the general population. We want to give vitamin K in a significantly high enough dose that we really will activate [the protein] that is so important for protecting the lungs, and check if it is safe.”

Consumer Reports recently discussed three investigations of people with low amounts of Vitamin K and their increased risk of dying from any cause. Other research has shown that too little vitamin K is associated with various age-related concerns, such as cognitive function and mobility.

Vitamin K is needed for normal blood clotting and is related to healthy lungs – it has been shown to protect lungs by protecting the elasticity of connective tissue, and it makes sure minerals (e.g., calcium) stay in bones rather than the blood vessels, which inhibits atherosclerosis. Both blood clots and difficulty breathing are serious complications of viral disease.

I don’t think about vitamin K often like I do like the B vitamins or C and E (for skin health) or even A.

But next time I get a nick from a bad paper cut, I’m going to be grateful for the fact that my Green Drink not only tastes great, but will help my boo boo heal fast.

Women around my age should consume about 90 micrograms (mcg) a day, of vitamin K. As for men: 120 mcg.

Who Needs It Most?

Although it’s not common for someone other than newborns to have a vitamin K deficiency, certain people do need more.

If you have any digestive issue that affects how you absorb nutrients, you might want to consume more vitamin K. Ulcerative colitis, Celiac Disease, and Cystic Fibrosis are examples of malabsorption conditions that may require an increase of vitamin K.

If you have one of these conditions, consider not only drinking Green Drink first thing in the morning, but also eating lots of green leafy veggies in salads.

In addition, the Japanese fermented soy food, natto, is the highest source. However, if you have a FODMAP sensitivity, it might be best to avoid fermented foods.

K2: Is it the same?

On certain food labels, you might come across vitamin K2. The plant-based form of vitamin K is K1, whereas animal-based sources are K2.

I’m not vegan, or even vegetarian. But I do believe in popular food writer, Michael Pollan’s famous saying: “Eat food. Not too much. Mostly plants.”

WIthout doubt, you can definitely get enough vitamin K from plant sources.

There’s actually vitamins K3, 4 and 5, but you’ll need a degree in biochemistry to understand what they do.

Health Benefits

Here are some other reasons to have a Green Drink every day….

There’s a protein in your heart that depends on vitamin K. The protein is also located in your bone and cartilage. This protein is very important because it can help reduce calcification (hardening) of the arteries in the heart.

That’s why if you’re not getting enough leafy greens in your diet (either through Green Drinks or salads), you might be at greater risk for heart disease.

In addition, there’s another protein that depends on it for healthy bone formation. That’s why researchers believe there’s a link between low vitamin K intake and osteoporosis.

And when you get older, you’ll especially want to make sure you’re getting enough leafy greens. That’s because the higher blood levels of it you have, the lower your chances of memory loss. Moreover, your blood pressure will be at a more normal level.

Have Some Fat With It

K is fat-soluble. That means you need to eat some fat with it so your body absorbs it.

My Green Drink has zero grams of fat, or at most, a trace amount. So what I do is shortly after I have some Green Drink, I’ll have a tiny amount of avocado, coconut oil or almond butter (or other healthy fat) so that next time I get a boo-boo, my blood will clot fast.
